Lentil Salad

Super amazing and refreshing on a hot summer day!!!

lentils, 1 1/2 cups
grape or cherry tomatoes, 1 cup
celery raw chopped or minced, 1 cup
feta cheese, 4 oz crumbled (dont add if trying to lose weight)
fresh tyme, 2 tbsp
lemon juice, 1/3 cup or 1 juice from one squeezed lemon
olive oil, 3 tbsp
garlic, 1 tsp
1 red onion diced
1 tbs dijon mustard

cook lentils according to package, drain well
dice celery,
add in diced onion
cut grape or cherry tomatoes in half
combine lemon juice, olive oil and garlic for the dressing and dijon mustard
combine all ingredients and toss with dressing

note: use half the tyme if using dried instead of fresh

Number of Servings: 6 calories per serving: 181 (less if you leave out feta cheese)

You can eat it right away or stick it in the fridge and allow it to chill
