Ok. I bought an eggplant...now...what do I do with it?

I have a gorgeous eggplant that looked pretty cool. But, for the life of me, I have no idea what to do with it. I thought I'd ask as everyone was so helpful with my last request for Butternut Squash recipes. Now, I need some help with this large purple looking veggie. What's the easiest and best tasting way to prepare it? Do I remove the skin...keep it? Do I add certain spices?

I think I am late but here is my recipe
Cut eggplant into round slices, put in a ball and sprinke with salt. Let stay about 10 min. eggplants contain a bitter liquid. Salting eggplants removes some of this liquid and improves their flavor. Dice 1 onion, 1 carrot, 1 bally pepper, 2 tomatos. Combaine all together an stew. add spices0 -
Eggplant Parmesan!! Slice egg plant into 1 inch thick coins, dip in eggwhites, and fry in a pan lightly sprayed with olive oil just until crispy, put in a sprayed baking sheet, top with veggies(tomatoes, mushrooms, spinach, and 1/4 low fat mozzarella for a wonderful dinner, less than 100calories.0
