vegetable chili

So ladies, my vegetable chili that I did had good and bad response.... However, way more good then bad. Jim said the only bad thing is that he is not used to having any type of chili with asparagus and eggplant in it hahaha!!

I used:

black beans
garbonzo beans
very little shredded beef (this was so that it thickened up and so that the family would eat it)
brocoli
asparagus
eggplant
carrots
onions
zuchini
salsa
diced tomatoes
vegetable broth

I cooked it in a crock pot with Chili 9000 seasoning from Penzy spices. Jim did say that it had amazing flavor, he just couldnt get past the egg plant.... HA, but the million other vegetables didn't bother him LOL

Bradyn loved the flavor! He said, More More More!!!

Then I froze some for later use.

Sounds absolutely disgusting, but it was nice to get all of those fresh vegetables in a warm dish.

  • I'm really craving some chilli since you started talking about it. I used to make a vegetable chili that I found on Shaklee's website and I have since lost the receipe. I am going to have to try and reconstruct it. It is similar to yours only it had

    onions
    green pepper
    red pepper
    zucchini
    mushrooms
    carrott
    tomotoes (I think I used the stewed tomatoes)
    I used to add tomotoe sauce too because I had so many veggies.
    kidney beans
    pinto beans

    chili powder
    cummin
    salt
    pepper

    I used to also add ground turkey in it instead of ground beef. I bet you could get away with adding the ground turkey without too much problems.

    I think I will try and add some black beans in there too the next time I make it. I am not really fond of black beans unless I can cover up the taste.

    Do we have to be careful with using stewed tomatoes or are they ok as long as they don't have too much sugar in them?
  • Yes check the sugar level on it, and just make sure that the stewed tomatoes are not being added with a lot of additional items!

    How did the chili go? I saw you listed it as something you ate today!
  • Loved it. It's nice to have something hot on a cold day like today. I will have to check the sugar in the stewed tomotoes. I added 4 tsp of chili powder and 1 tsp of cumin and it was good. I know it also called for a little brown sugar which I left that out this time.
