Salad recipe that please non primal/paleo people.

Having given this recipe to the 10th person (non of whom are primal/paleo and a few who are scare of vegetables/salads) i thought i'd share
Raw Zucchini, Mushroom and Spinach Salad with Roasted Almonds and Parmesan Dressing
Salad
200 grams firm button mushrooms, sliced
2 medium zucchini, ends trimmed
2 large handfuls baby spinach
70 grams whole almonds, roasted
Parmesan cheese for serving
Dressing
1/4 cup freshly grated parmesan
1 clove garlic, crushed
1/2 cup olive oil
1/2 tsp finely grated orange zest
2 tbsp orange juice
1 tbsp white wine vinegar
sea salt and pepper
Dressing: Put all the ingredients in a food processor and process until thick. Season.
Salad: Place the mushrooms in a large bowl and pour over half the dressing. Gently turning to coat and leave for ten minutes.
Using a vegetable peeler, thinly shave the zucchini, working your way around the core, which contains small seeds. Discard core.
Add the zucchini, spinach, and almonds to the mushrooms along with the remaining dressing and gently toss together. Transfer to a serving platter and top with shaved parmesan
