Coconut Crack Bars

Made these today. Had to laugh. 6-8 bars is laughable. If you cut them into bars, they'd be itty bitty. It made 12 truffle size candy shapes - so 2 balls per serving, 6 servings. Regardless, they are pretty yummy!

    I just found it next to the sweetened stuff at a discount grocery chain (Superstore, dunno if that's elsewhere in the world).

    I live in a very rural town - meaning the nearest health food store or super store is 100+ miles away. Amazon Prime is your friend. You can find anything there - and get free shipping to boot! :drinker:

    Another vote for Amazon! We use it all the time -- love our Prime membership.

    I got a really good deal on every type of unsweetened coconut when Tropical Traditions was running one of their free shipping coupons. If you haven't checked out their website... they have some pretty awesome stuff. If you sign up for them to email specials to you, then you should know when the next free shipping time is.

    Thanks, I'm an Amazon Prime member but try to support local brick and mortar stores when I can, but I'm not braving our crazy Whole Foods for one item!

    Made this afternoon as an Easter treat - stirred in some cocoa nibs and finely chopped soaked/dehydrated almonds before rolling into balls. Yum!! A bit sweet for me, though; next time I may try 1/8 cup maple syrup and 1/8 cup coconut milk for the liquid component. (yes, there will be a next time!)
