egg "muffins" to avoid boredom

Hi guys, here's a recipe that helps if you are sick of eggs but needing protein:
preheat oven to 350, spray 12 muffin tins with nonstick
beat 12 eggs + 1/2 cup milk, salt and pepper (like you are making scrambled eggs)
add in some "flavour" like salsa, herbs, mrs dash (the other day I used mushroom soup!)
add in 1/2 cup shredded cheese
chop up green onions and other sauteed veggies you like, I add in chopped back bacon etc,
1. put chopped ingredients into muffin tins
2. pour egg over top (keep at 3/4 full as they "rise" a little
3. bake approx. 20 minutes until set.
these last cold in the fridge and are great for lunch or just to grab for a snack. I log them in MFP as "south beach" egg muffins, they can be around 100 cals, depending on your ingredients.
