Cauliflower Mashed Potatoes

So this might already be posted somewhere on here but it's delicious and I have to share!
1 large head of cauliflower
3 tbsp light soy milk (works the same as milk and is way healthier!)
1 tbsp light butter
2 tbsp low-fat plain Greek yogurt (or replace with light sour cream)
1/4 tbsp garlic salt
Black pepper
1. Simmer about 2 cups of water in a large cup.
2. Chop cauliflower into small florets.
3. Add cauliflower into boiling water and cover with a lid.
4. Cook for 12-15 minutes on medium to high heat.
5. Drain cauliflower, pour out water, and out it back into pot.
6. Add in other ingredients and mash the mixture with a potato masher.
7. Pig out!
This makes about 7 cups and 1 cup would be a serving, 50 calories per serving.

I make something very similar.
Boil potatoes until soft and then drain off the excess water. While they're still hot add a container of sour cream, half a block of cream cheese, a couple of cloves of roasted garlic, a handful or two of parmesan cheese, and some milk. Mash it all together. Easy peazy!0 -
