Baked Zucchini fingers

Options
2 meduim size Zucchinies
2 Large Eggs
1/3 cup seasoned bread crumbs
2 table spons of grated Parmsean cheeze
1/4 teaspon of Garlic powder
1/4 teaspoon of Ground pepper
Pinch of salt

Get the Oven going at 425
Take a small bowl and beat the Eggs completly, add salt & pepper
Separate bowl, add Bread Crumbs, Garlic & Cheeze and mix well and put into large ZipLock bag
Cut end of the Zucchine off & discard, cut remainder in half and then into strips that look like Fries
Cover a large cookie sheet with foil & spray with your favorite cookiing oil
Dip / coat the Z-Strips in the egg batter, a few at a time is OK, then into bag with the dry mix and shake well to coat
Place coated Z-strips onto the cookie sheet close together and when full, lightly spray again on top
Bake for 18 to 20 minutes

Cal = 122; Fat = 2.4; Carbs = 21 = Fober = 6; protien = 6.7
Serving size = 10 Z-Strips
Recipie makes about 4 servings

Great for a quick & Easy Snack ( think Super Bowl ) and you can dip in a Marianna Sauce ( commercial grade or Home Made ) but beware a 1/2 cup dipping serving is typically 52 Calories without a lot of benifit except the great taste

    Love this recipe! I only use eggs whites for "glue". Gets the calories down even lower. This recipe works for just about any veggie and is great for fish sticks as well! Thanks for reminding me!
