Warm Kale & Tomato Salad

I've adapted this recipe from the Mayo Clinic Diet Cookbook and it is deeeeelish!
1 tbsp olive oil
2 cloves garlic, sliced or chopped
2 bunches organic kale (stems removed)
1/2 cup homemade vegetable stock
1 pack organic cherry tomatoes, halved
1 tbsp fresh lemon juice
pinch of sea salt
pinch of pepper
Heat the olive oil in a frying pan and then fry garlic for 1 or 2 minutes. Turn heat to medium, add kale & vegetable stock. Cook covered for 5 minutes. Add the tomatoes and cook 5 more minutes. Turn off the heat and add lemon, salt & pepper. Enjoy right away
