I thought a string that has meal and recipe ideas would be a good idea. Here is my new favorite breakfast and a dinner I am going to try on Friday...

Oatmeal pancake:
3 egg whites + 1 package of instant oatmeal (any flavor you want) - mix together and let sit overnight. Next morning, add a little water to thin batter. Heat a frying pan - spray w/Pam. Pour batter and cook like a pancake. About 2-3 minutes per side. Roll up and eat. Great high protein mobile breakfast. (1 red and 1 yellow)

Spaghetti Squash bake:
1 small spaghetti squash prepared and strings removed. put in a bowl.
2 large tomatoes - sliced thin
1 C mozarella cheese

Layer spaghetti squash and tomotoes and a little cheese in alternating layers. Last layer should be spaghetti squash. Top with rest of cheese and cover. Bake @ 350 for 30 min.
Each portion will be 1green & 1/3-1/2 blue.

Enjoy!

Yep. Totally edible. It's like a thick, fuzzy grape skin. Some people like it, others don't. Give it a try.

Another option instead of peeling: Split in half and scoop out with a spoon.

Just saw this post after asking for some suggestions in another one. GREAT topic and thanks so much for sharing.
I know I will want to mix it up with some recipes this week so I don't get bored. Last week I kept it very simple to make sure I understood the plan.
