Good morning!
I just wrote a novel for my opening post and then accidentally deleted it, LOL! Good thing--save your eyeballs. I'm raring to go today. Must be all that nutrition and hydration.
Yesterday was the day of my weekly methotrexate shot, so today is my best day for no joint pain. It's such a relief! And amazing, too, that I can go from so crippled I have to crawl up the stairs on my hands last night to practically dancing out of bed this morning. I plan to take full advantage and swim laps for at least an hour this morning. I need a good, long workout--yesterday's was meh.
Today I need to tackle the enormous pie of medical and tax paperwork that is overflowing the BOX that I've been dumping it in. Haha, PILE, not PIE, although if it were the latter, I probably would have tackled it already.

Sounds like a plan to me!! I am off work now and going shopping n an hour...will have to look for something new. Persimmon??? I am rather fortunate as there are fruits and veggies from all over the world and I do eat a lot of them. If anyone can get their hands on the following...you will love them: leeches, mangostein, rambutan (Fruits from Asia). I will have to look in the veggie market, perhaps i can take some photos of the variety here!! Not sure, will see! But this sounds good....(would have been much better if you had suggested for us to try 3 different new desserts!!) lol0 -
Nancy , have you ever tried Durian? Maybe put that (and a pair of nose clips) on your list!0

YAY for no pain! I love hearing that Karen! There isn't much fruit/veggies I haven't tried.. Remember, I did a 30 day juice cleanse. I was desperate to try everything since I only allowed myself fruit and veggies. IF we are going to do this, I need to hit up Whole Foods on Friday since it is somewhat close to my work.. well a lot closer than the 35 miles from home.0

Yeah, this is definitely going to be a "challenge"---Dee, will you be able to get your hands on a few things? At least this time of year we have lots of choice. Even if you just buy one little new kind of pepper to chop up and put in your eggs... that would be easy and cheap.
I say let's go for it. If it were easy, it wouldn't be worth doing!
I think the next mini food challenge will be to try preparing a fruit or veggie in a new way. Like grilling peaches (never done that to a peach, but it's supposed to be good... part of me feels like it would be sacrilege). We can also try a good dairy/lean proteins challenge. I need something to get me to try plain greek yoghurt again or kefir, both of which are so good for my body but I just can't get past the sour taste.
I just did a quick search of my local supermarket, and I can get a cactus pear for 99 cents, 1/2 pound of jicama root for under $1.00, an "assorted hot pepper" for 15 cents, and a bunch of dandelion greens (which are supposed to be really good for you) for $2.00, so even if I can't get to a fancy store, I have options.
Last weekend, having to get those three new exercises in, kept me thinking about my goals and kept me moving and motivated. I like that--it's so easy to slack off during the weekend. This weekend, I'll put that cactus pear on the counter and let it stare at me for a couple of days as a constant reminder. Maybe I can get Jim to try something new, too. He's a picky eater, but in the spirit of competition, he might give it a whirl.

I'm in. I have a small bit of money left and I'm sure I can find something over at the store that I haven't tried that doesn't cost too much. But thanks for thinking about me Karen. This month is the last month of paying off my large bill. I've been paying $500 for 4 years (a little less a couple times, especially around Christmas) and it will finally be gone. It'll be so nice to have that $500. It'll take me a couple months to get all the bills caught up but after that, OMG I don't know what I'll do. I'll actually have money. It's been so long.
I got a late start today. Michael let me sleep in and it felt wonderful. I don't have any errands to run today but I do need to tackle the laundry. I thought about swimming, but believe it or not, It's actually a little too chilly for that. Now that's something I never thought I'd say at the end of July in St. Louis. This is usually when we are having heat indexes in the 100's and quite possibly temps in the 100's. It's only supposed to be in the low 80's!
Karen, as for the plain greek yogurt.....try putting fruit in it (strawberries, blueberries, etc). That's usually how I get mine in. It's a great source of protein, something you will need to eat a lot of after your surgery. I've never heard of kefir. What is that?0 -

Oh, Nancy, you made me laugh out loud!!! I think I'll wind up doing the same thing--having this odd piece of produce without a clue what to do with it. Thank goodness for Google. My first year teaching in Bulgaria, the university president spent a fortune having Turkeys flown in for thanksgiving (they were impossible to get in Bulgaria). They were given to the cafeteria ladies, and on Thanksgiving day, we all went to the cafeteria to have our awesome dinner... of BOILED TURKEY! No one though to ask if they knew how to cook them. Bwahahahahaa!!! Incidentally, boiled turkey is disgusting.

All of this talk of exotic fruits and vegetables are reminding me of my years in Brazil. The fruit down there is amazing and it is everywhere. There are literally fruit trees growing in the middle of downtown Sao Paulo. It is going to be tough to find some new things, but I am in.0

Your LOCAL market has those? Wow! Dandelion greens... I have juiced them.. :bigsmile: I would totally been in for it. I love me some Whole Foods and would give me a great excuse to go shopping.0 -

I am leaving for vacation tomorrow so the challenge will be even more of a challenge because I am probably going to be eating out every meal. But...that might work to my advantage too because the restaurants will prepare my veggies for me! I'm not a huge veggie person, so I will give it a shot.

Well a double woohoo to me tonight. I did a LONG swim (to the sailboat in the first cove... I know that doesn't mean anything to you, but I was only going to swim to the Napolitano's house, and the sailboat is another third of that distance). Translated, that means I swam the crawl for over an hour (I think it was 75 minutes) at a good, brisk pace. The weather is supposed to warm up here tomorrow, so I'm hoping by Friday to pass the sailboat and swim to the yellow house, then by Sunday to hit the first point. If I can do the point for a week, that's a good 100 minutes of swimming. I'd still like to do the length of the lake by Labor Day, which is probably a 4 hour swim, but I need to find a better way to stay hydrated than tucking a water bottle into my bathing suit between my boobs, LOL!!!
Very exciting. If I were as computer savvy as Rat and Heather, you KNOW I'd have a map on here!

A gazillion years ago I was on holiday in Sri Lanka and tried it. Smells like very, very dirty socks. Taste was OK. The worst thing I had there was their treacle.....OMG horrible stuff!0 -

LMAO...I was thinking when I bought them last night,how I was suppose to peel them...thanks for the video link....you don't peel them!!! I also bought a long 'green' white pumpkin....will have to figure that one out too!! Probably bake it??? They had these Indian long, long, like yardstick long green bean looking things called 'drumstiks' ....first i could not figure out how to purchase them, they do not fit into a bag...they are at least over a yardstick long...and as thick as you index finger. Someone told me they are cut up and put into curries...will have to research that and ask my Indian staff today at work!!0 -

It is like a passion fruit with a bunch of seeds in it! Apparently you can make drinks, cheesecake, puddings etc...but the links are mostly in Spanish!! Oh well! This link suggest to put a tsp of sugar in the fruit to sweeten it up a bit...just what I need more sugar in my life. Maybe Stevia will be OK!!0 -
Good work Karen. I'm jealous of your location ( a little) with access to the water. Your doing great.
Also be careful, especially if your pushing your distances in open water and with hydration. It would be nice if someone like camlebak made a hydration pack for swimmers. I know most long distance swimmers usually have someone in a kayak or boat to provide water (does your hubby feel like a row). If your swimming near shore you could set out your water before hand.
Well camlebak's hydration packs are water proof (not the packs but the water bags are) but I'm not sure about the bite valve, though I think they make some with shutoffs near the bite valve. So that might be an option. They also make waist strapped water bottle holders that hold the bottles along the small of your back. As long as the bottles were secure then that might work.
Also don;t forget about replacing your electrolytes. I'm currently using Nuun (http://www.nuun.com/) when I go out on hour long bike rides. They make nice sugar free electrolyte tablets you add to your water.0 -
Stuff made from maracuja is delicious. Usually they would make it into a drink or a mousse and I loved it haha. They are quite tart so the stevia is probably a good idea to make it a bit more palatable.0

Good point, Pat. I'm terrible at staying hydrated when I lake swim. At the pool, I always keep a bottle on the edge of the pool and stop to drink. I can do about 90 minutes of lake swimming without drinking anything. Longer than that and I start to get really bad foot cramps, then eventually I'll get charlie horses, which SUCK if you're half an hour down the lake from home. I don't know if that's necessarily from dehydration or from the potassium loss. The nice thing here is that it's a small lake and I know a lot of the folks who live here since I've been on the association board of trustees for 14 years, so if I get into serious trouble, I can always flag someone down. A couple of years ago I was on a 3 hour swim and I got horrible calf cramps and wound up dragging myself onto someone's floating trampoline for a half hour rest. The home owner sent her kid swimming out to me with a banana and a bottle of gatorade!
I looked up camelbaks for swimmers and found that some triathletes do swim in them for training, although I can't imagine how uncomfortable that would be. Most of the lake and ocean swimmers in online forums either rely on a spotter to carry their water (and yes, when I do my full lake swim, Jim will spot me) or they tuck water bottles into their shorts. On some of my longer swims, I've done exactly that--rolled plastic water bottles down the back of my suit so I have three sitting in the small of my back. As I empty them, I just put them back in. As long as I'm wearing a fairly high-backed, tight suit, I'm good. I'll definitely look up Nuun--I didn't know you could just buy the electrolytes! Cool.
I'm just thinking how crazy it is to be in this group with all these other morbidly obese or honorarily obese athletes. Like Zac, I've always been big and athletic. Seriously, I just swam the crawl for 75 minutes and I weigh 479 pounds. Who does that? I used to climb mountains every weekend in my 300's (my sister taught step aerobics 3X weekly weighing 280 pounds, and she was the gym's most popular instructor). I remember one weekend climbing Double Top, a mountain right next to Mt. Katahdin, Maine's highest. (not very high compared to the Alaska Range!) I dragged my butt over a really rough trail, skinned both knees, arrived at the top dripping in sweat and covered in dirt (parts of the trail had collapsed, and I had to pull myself up by protruding tree roots and literally crawl up rock faces--I LOVED it!). This young, fit couple showed up while I was eating my sandwich and enjoying the view, and the wife looked at me and said, "Oh--did you CLIMB up here?" I said, "Oh, no. I was airlifted by helicopter." She said, "Really? I didn't know you could arrange that here." Oh my god... had she never seen a fat person who could climb a mountain before? Hey, at least they took my picture for me.
Okay, I think that's my last ramble for the day. I really need to focus the next two days on getting some stuff done so won't be jumping in here every five minutes! Good luck to everyone for the last day of the mid-week challenge. Friday weigh-in should be very interesting!!!
