Halloween will be here before you know it, and with it comes lots of temptation! What treats - or tricks! - will be getting you through this holiday?

    Roasted Pumpkin Seeds

    2 C. pumpkin seeds (approximate)
    2 Tbsp oil or melted butter
    1 tsp salt (optional)

    Wash the seeds well and stir with oil in bowl. Spread out to single layer on a cookie sheet. Sprinkle salt on top if desired. Bake at 250 degrees F. until slightly brown.

    I just pined a recipe last night for a caramel apple snack/ desert that I can't wait to try...

    2 caramel Quaker rice cakes
    1/2 granny smith apple
    4 TBSP FF vanilla greek yogurt
    3 grams of nut topping
    drizzle with Caramel Sauce (Walden Farms but I plan to just use the Sugar Free Smuckers I have in the fridge and even less cal)

    only 195 cal for both!!!! I love caramel apples so this is perfect to get me through the holidays :)

    I love making this recipe in the fall..

    Fat Free Pumpkin Pudding

    1 (15 ounce) can of pumpkin not pumpkin pie filling
    1 (1/3 ounce) box of sugar free vanilla pudding mix cook and serve style
    1 teaspoon pumpkin pie spice
    1 cup of water

    Mix the water and pudding together and whisk until there are no lumps.
    Bring to a slow boil in a sauce pan
    Stir frequently as mixture begins to thicken
    Remove from heat and fold in the pumpkin and spices
    Pour into 8 small serving cups
    Refrigerate 2 hours until firm
    Top with fat free whipped topping

    When I entered it into recipes it listed as 28 calories a serving.
