hi guys
I am a bit of a bread *kitten* (well I used to be) I have now substituted bread for rice cakes as they are far lower in cals than bread.
I was just wondering if anyone had any ideas for toppings as I have them everyday for lunch at work
any suggestions will be amazing

Mmmm, rice cakes. They go on sale at HEB a lot and you can buy one get one free! Try to get the ones that are flavored. Quaker makes heavenly Apple Cinnamon rice cakes. Tastes like apple jacks!0

I don't use rice cakes as bread, but I do use English muffins. 2 of my favorite ways to top them are:
1. Toast English muffins in toaster. (You would not have to do that to the rice cakes, though.) Top with a mixture of drained crushed pineapple, chopped cooked chicken, onion (optional). Then mix together a little reduced calorie mayonaise, with some grated reduced calorie cheese. Spread that on top of the pineapple-chicken mixture. Yumm!
2. Top with tomato sauce or your favorite spaghetti sauce and low fat mozzarella cheese for a "pizza". Add whatever vegetables you like. I love sliced mushrooms.
You can also use small curd cottage cheese and top with peaches. I love that combination.
Experiment with mashed avocados. They are higher in fat, but healthy fat, and they taste so good.0 -
I like to top my rice cakes with tuna for lunch, or PB for a snack .. I'm in the same boat, I love rice cakes as a substitution for bread.0
