Suggestions for oil

What would be a good oil for pan frying something (parmesan coated chicken nuggets)?? Trying to stay away from the usual "vegetable oil" thing. Is canola oil ok? Or?????

This. Vegetable oil and canola oil arent good period. Olive oil is bad at high temps like frying and is best used cold

Bacon fat, ghee, butter, coconut oil or even avocado oil are all decent at high temps.

Unfortunately all of those, and peanut oil, are too expensive :( I will figure something out

In order of preference: ghee, coconut oil, bacon fat, olive oil.

Packaged ghee is very expensive, so make your own. Here are instructions:

Be sure to use unsalted butter.

Lard. Inexpensive and tastes damn fine.

Peanut oil isn't good for frying. It's a high Omega-6 fat, which breaks down under heat.

So get butter and cook with it, or make the ghee yourself. Or save the grease from bacon, or make your own lard (you can get raw fat from butchers for $1/pound or less, then just melt it down, strain out the solids, and you have lard).
