Toasted Coconut Flakes

Maybe these have been mentioned before, and I missed it. New discovery for me: toasted coconut flakes. Wow!
I was never a big fan of coconut, maybe a little in Thai curry, but that's all I could take. But I bought some packaged coconut chips at Costco to try as a snack, and I found them delicious but loaded with sugar and a bit too sweet.
So I bought a bag of plain coconut flakes intended for baking. We baked them just enough to toast them. They are delicious, inexpensive, and couldn't be simpler to make.
Warning: they are just as addictive as potato chips, just fewer carbs.
