Need More Calories

Ok, so with all my restrictions, I'm having issues getting enough calories in. Trying to keep carbs under 50g a day.

Restrictions: Gluten, Dairy, Chicken, Eggs, Grains (except rice, but not LC), Artificial Sweeteners, Sugar (I can have small amounts of honey, molasses, coconut sugar, and stevia), and Almonds.

I made stir fry for lunch, figuring that would boost my calories - nope, still under 500 for the day. I never feel hungry enough to eat a lot when I do eat, but I feel hungry an hour later. I'm not allowed to skip meals due to issues with hypoglycemia, plus I'll end up eating Fritos and bean dip for dinner if I'm exhausted and don't want to cook. I have lunch meat I can eat for snacks and I'm out of pickles until this weekend, but I'm running out of other ideas for snacks.

I've tried looking for dairy-free almond-free sweetener-free fat bombs and have only found one (that I do plan on trying) - http://ditchthewheat.com/cinnamon-bun-fat-bomb-bars/, might be able to alter this one: http://www.healthfulpursuit.com/2014/11/fat-bomb-pumpkin-pie-patties/

Any suggestions?

    spinach with lots of coconut oil and a steak.

    Everything you seem to be eating sounds a little on the lean side. Look for nice marbled cuts of meat. Chuck, rib eye, even some strip. Add ghee (for many people this doesn't trigger the dairy sensitivity, ymmv) as a sauce to things. Avocados! Avocados night and day! Coconut oil, as mentioned, and Baaaaaaacon. If you're sensitive to the commercial additives, look for side of pork or pork belly and bake your own!

    I use bacon snipped in pieces as the basis for nearly all my stir fries anymore. Coconut oil with coconut cream could be good in coffee if you don't mind the coconut flavor.

    I do taco salads with a fatty meat. I add in diced avocado. I usually use sour cream and cheese, but you could skip those... (I make my own seasoning and don't add thickener).

    What about a tomato based soup? I love a tortilla soup we make it is onions, garlic, jalapenos, chicken broth (could easily use beef or veggie base), fire roasted tomatoes, black beans (I try to get less of these two for my portions). Then it gets lime juice and cilantro tossed in (it calls for chicken, but you could do it with any other meat of choice, but the flavors are awesome.

    Or a pumpkin/butternut squash soup with coconut oil for creaminess?

    I made meatballs with 73/27, 80/20 beefs and sausage last night. Dumped seasoning in and added sauce. I put cheese on mine, but my guy ate them on bread (french)... but keto meatball recipes can be done without parmesan. I found a recipe the other day that was meat and seasoning. Drippings and fast can be used for the binder to avoid eggs....

    I'll leave this thought to percolate in the back of my head for a while...

    Thanks for the ideas. I'll have to figure out how to tailor them to hubby's tastes (he doesn't like...anything I know how to batch cook) and mine, which seems to be much easier these days.

    I tend to cook to my guy's tastes and add my stuff after. The taco meat, I bake taco shells for him with beans, sometimes rice, lettuce, cheese and salsa. I do mine as above. The stir fries, I make the same (anything can go in a stir fry....LOL), then I add extra butter/bacon drippings, salt, and anything else I want to mine, serve his with rice, etc.

    The soup, he eats with Fritos, and I dump cheese on mine (I know you can't do this right now, but I bet you could find a salsa recipe that would be awesome)...

    Meatballs made with seasonings can then be cooked in whatever sauce. Served stand alone, with pasta/fake pasta, on a sub, as appetizers, with a tooth pick, on a kabab, etc. I always add the carb stuff (potatoes, rice, etc. with his, leave it out of mine)... I think I found 45 meatball keto recipes on one page yesterday.

    What things do you "batch cook" now, and we can offer ideas.

    Another great thing is what I learned to call hobo dinners. You put a patty - beef/chicken/turkey, whatever, add a seasoning (premixed soup, soup mix, salsa, etc), toss in veggies, add whatever you want - wrap it in foil, and each person gets a custom meal with blended seasoning. I wasn't low carb when I learned these so it was burger with salsa, potatoes, cheese, corn, etc. Others used cream of mushroom soup or onion soup mix, etc. Tons of things you could add. Each in it's own foil pouch.

    Oh, and buying any kind of roast, slapping some salt and pepper on it, shoving some garlic in the holes, then roasting it to medium is a way of batch cooking....sorta. LOL

    Also, is your hub LC? Can't recall... Always glad to brainstorm!

    He's low carb as well. He doesn't like Chinese food (unless it's egg drop soup, or we can get the spicy chicken at PF Chang's) to the point where he has drowned it in cheese so he couldn't taste it. He doesn't like Mexican because of cumin. He doesn't like pot roast or barbecue.

    Stir fry, taco meat, pot roast and barbecue are my usual big batch foods that are suitable for low carb. I used to also make big batches of chili and spaghetti (he doesn't like either). He doesn't like to ever eat the same thing twice in a row or multiple days a week.

    And he calls ME picky.

    Wow, that's really restrictive of him and hard on you in terms of labor. You may need to make things he can eat and freeze the portions so you can rotate them to his whims, and then just have your food the way you want it, when you want it.

    I've looked at AIP recipes galore, have most of the books, but batch cooking is still something that escapes me given the restrictions my husband places on food.

    But that fudge does sound tasty.

    Good grief... If I were in your shoes, I'd end up telling him to make his own food, then... (Actually, I kind of did that when my husband complained about not having sides/things to take for lunch...after the third batch of salad mix I had made for him went into the compost bin...)

    I've seriously thought about it, but then he'll revert back to his norm - grilled cheese, cream of chicken soup, ice cream, and ramen. Even low carb he will only stay on as long as the scale says he is losing weight, to the point where I make sure the grocery money is gone early in the week to make sure that he doesn't have much of an option but to stick to it (and neither do I) unless he's willing to spend his own money.

    Mexican food can be made without cumin. Easily. There are a ton of recipes that you make your own sauce.

    Have you tried a variation of crack slaw? I made it with diced pieces of bacon and then we browned and added smoked sausage/kielbasa in it because we'd gotten the sausage on sale... I'm dying to try it with the burger meat. That's kind of stir-fry-ish without tasting like chinese food.

    I don't do pot roast, but I do make roast beef (I don't do this unless I can get it for less than $4 per pound) a lot. Then I keep the drippings and some bone broth or buillion to reheat it in and make it's now gravy type thing.

    I also make up burger patties in quantity (usually 8 or more at a time)... Then we can eat them like bunless burgers, like hamburger steaks, or cut up and tossed into a salad for a "mexican" style salad with some salsa.

    there are dozens of variations of barbecque - so maybe mix that up some?

    Okay, if he likes grilled cheese, you can try doing a variation on sauce-less pizza in a skillet. Coat with butter or coconut oil, and dump in about a cup of his favorite cheese. Cook until it melts, then add in whatever he likes - I've done taco meat, or plain hamburger with bits of bacon, or just sprinkle with popcorn seasonings. It gets brown and bubbly like a grilled cheese (I made my guy quesadillas the other night and just brown up/caramelized some cheese in butter).

    I know you can't do the dairy right now, but you could try that Kale/Sausage soup with coconut cream instead, I would think, and if he likes it, freeze it in portions. It's kind of a like a "cream of" soup. You could puree the kale in if he'd balk at it.

    You can make LC friendly ice cream with cream cheese/heavy cream, even custard styles with egg yolks, etc. There are a ton of batches you could make this way.

    If he likes ramen that much, try those miracle noodles in broth. You can even make it carbonara style by throwing in some egg yolks and ham or bacon stuff.... Those miracle noodles could go in his "batch" and "stir fried" cabbage in yours...

    Just some thoughts...

    I always found that my husband was pickier when he was low on fat. I keep fat bombs around for him and when I hear that tone coming into his voice I suggest he have one or a square of dark chocolate, and we're usually okay after that. I used to throw out SO much food trying to meet his emotional food tastes, but it's way easier this time. Sometimes he'll still tell me he's getting tired of something, but at least he's happy if we mix it up a bit with some new spices or ingredients in the recipe. Once he's gotten back on track with his fat for satiety, he perks right up.

    What about smooties? You can get vegan protein powders made from brown rice. I'm not sure if you can find one that meets all of your requirements? You can add avacado and spinach, frozen berries, coconut water or coconut oil to them even. And goat milk yogurt to thicken it?

    My naturopath had me off of eggs, dairy and gluten at one time as well so I made alot of these smoothies everyday. I also got alot of good recipes from Pinterest. I'm at work right now and pinterest is banned, so I can't link any right now, but it's a great place to start! You could also look up "energy balls" and might find some you can eat?

    There is one protein powder I can have, and it's expensive enough that I'm only using it for breakfast. I'll look up energy balls. Smoothies end up not tasting good to me unless I add a bunch of fruit, and they have too many carbs.

    After a bit of conversation, he agreed that if we can come up with 3 veggies and 3 meats we can package up ready to go for his lunches, he'll have enough variety in his lunches.

    Meats:
    1) bacon - wrapped chicken breasts
    2) pan-fried pork chops in butter with magic mushroom powder
    3) burgers

    Veggies:
    1) Canned spinach
    2) Broccoli & cheese
    3) salad (I pick up the pre-made ones for him)

    Now I'm scouring my cookbooks for recipes that might work batch - cooked for dinners.

    Well, the good news is, I don't have to work around his food sensibilities as much. The bad news is, he quit LC because he was gaining weight.

    No whey, has dairy. Most of the ruled.me recipes have dairy as well (or almonds or chicken or...).

    Without worrying about feeding my hubby low carb, I can go back to taco meat & BBQ pork & roast beef for my meals. :smile:

    Dairy can nearly universally be substituted out for something else or left out altogether.

    If it's the liquid in the meal, you can use coconut milk, or even just water (depending on the recipe).
    If it's a binder, applesauce can be used instead.
    For butter, use coconut oil or coconut butter (or lard or tallow) instead.

    Eggs are the same way. Applesauce or chia seeds made into a "pudding" are a good substitute for most recipes. Emulsifiers are a little more difficult, but if you can get your hands on sunflower lecithin, then you'll be well on your way. Lecithin is a family of compounds that act as emulsifiers. Eggs contain a kind called phosphatidyl choline, which is the main part that makes egg a good emulsifying ingredient, but any of the lecithins will do the same thing.

    If it's a full recipe, chicken can usually be substituted out for other meats. Can you do other birds? Turkey, duck, quail, pheasant, and grouse will be the closest for the recipes that kind of require a bird. For anything that just requires shredded, ground, or chunk meat, you can substitute in beef, pork, or any other kind of meat.

    I'm not 100% sure, but I think there's a certain amount of interchangeability between nut meals/flours, so try something like walnuts, macadamia nuts, or cashews in place of almonds in recipes if your restriction issue doesn't cross over to the other tree nuts. If it calls for meal or flour, just buy a container of chopped and run it through your food processor or blender.

    What about cashew butter? I love eating almond butter for a snack, but I know you said you can't have almonds. Cashew butter is supposed to be tasty. Avocados of course. Steak, burgers with cheese wrapped in lettuce, think 'heavier' foods.

    But it is a great splurge.

    I had a salad with grilled salmon and feta cheese

    Celery sticks with some using cream cheese, some cashew butter...

    Mmmmmmm

    Lol. I think I'm sorted, even picked up an herbed goat cheese to test out. Need to do a bit of cooking tomorrow and I should be good. :smile:
