What I did With Coconut Milk

I bought some Silk coconut milk the other day and drank some. It tastes pretty good. It has a very light coconutty flavor (I love coconut).

But I didn't know what to do with the half gallon I had. So, I was making my sugar free Jello and thought to mix it in. So I added the Jello to the first cup of boiling water, stirred with my hand held power mixer, then instead of using one cup of cold water, I used one cup of the coconut milk.

Today at lunch, I tried it and it was fabulous! I used orange SF jello and it had a hint of coconut flavor and the texture was smoother.

So, if your tired of plain old SF jello, try using coconut milk....

    That sounds interesting. I've tried lots of coconut and almond milk varieties and my favorite is by Califia Farms, it's a coconut almond milk blend. A bit of both flavors. I love it with my dark chocolate whey protein powder.

    I make curries with my coconut milk (or cream). A whole can between 2 of us and throw in curry powder, cumin, a few shreds of dried coconut, some onion and fish or prawns/shrimps.

    The jelly/jello sounds delicious too!

    I agree with Grannymayoz. ..brilliant for a quick tasty curry with prawns or chicken or even go more 'Thai' by adding lemon grass, chilli and ginger.

    Oh coconut curry. Yum but I have so much trouble enjoying it without the rice. Cauliflower rice just is t the same!

    Buy slim rice or noodles! No carbs. 8 cals per month 100gm! Made from konjac flour also known as glucomannan or shirataki noodles.

    I think the Coconut Milk Dan is talking about is the drink/beverage variety in a carton where milk, almond milk etc is kept, rather than the thick, creamy coconut milk in the cans.
    I dont think you could use Dan's cartoned coconut milk in curries etc as its far too watery.

    Now I want curried shrimp or chicken, made with a can of Native Forest organic coconut milk, it's really thick and yummy.

    Califia Farms Coco/Almond blend is my absolute favorite too. My daughter has now switched over from the sweetened vanilla Silk to my Coco/Almond blend. It is so rich and creamy, that she doesn't miss the sweet.

    I wish i could still drink almond or coconut milk in my cofffee. Black coffee is taking a lot of getting used to and using HWC is making my calories go too high despite me giving up food to drink the stuff (i literally have to go without lunch to fit in a couple of creamy coffees as id like).

    The unsweetened coconut and almond milks at our supermarket (Asda, UK) all still seem to have too many carbs (I try to keep my carbs to less than 20g or i drop out of ketosis). Bummer.

    We have tried the Silk Almond Milk and occasionally drink some of that with half a packet of sweetener. And last night I used it along with some heavy cream and cocoa in the blender with ice to make a "milkshake". I'll have to try it with the Coconut too.

    Hey Dan! I usually get Blue Diamond / Almond Breeze brand unsweetened almond coconut blend myself.
    I've added it to jello before, too.
    If you like chai at all, you can make some delicious chai jello with unsweetened unflavoured gelatin, almond/coconut milk, chai tea, and a few drops of liquid stevia (or sweetener of choice).
    You can also make coffee jelly with some mixed in, too.
    I prefer to drop heavy cream on top of my jello, though, so I don't usually mix it in...but yeah.

    I also make drinkable fat bombs with my almond coconut milk. At night sometimes, I mix up a cold mug with that plus one or more of the following, depending on my needs:
    macadamia nut oil
    flax oil
    heavy cream
    walnut oil
    NO I am not saying add all this in! Just 1 or more tablespoon of whichever you feel like you need.
    To help deal with the funky tastes sometimes, you can add a dash of vanilla extract, cinnamon, liquid stevia drops...

    I also use almond coconut milk to mix with my protein powder. Sometimes if I'm low on protein for the day or don't feel like cooking / eating / chewing, I will make a protein shake in the evening with it and combine that with the drinkable fat bomb above.

    Mmm mmm!
    The unsweetened almond, coconut, or blended varieties are really good to have on hand. Sometimes I just add a splash of vanilla and drink it plain!

    @CoconuttyMummy I'm in Australia so obviously have different products but my coconut milk (tinned) is zero carb, zero protein. I use 30 ml per cup of coffee and 3 cups equals 11g fat. I hope you can find one you like. The brands certainly differ in taste and behaviour. There's one brand I won't touch in winter because the lumps just never go away.

    It *will* be a little lumpy looking in your coffee, depending on brand, but stir it and ignore it. Don't get put off by the 'off cows milk' look of it. It's delicious!!!

    Look for ones without stabilizers like guar gum.... that's where your carbs are coming from.

    I found the calories to be similar (maybe less slightly, but not by half or anything, but the carbs were way less, for the amount I prefer, and I'm heavy handed with my cream. I just couldn't get over the coconut taste, but you won't have that issue, since you love coconut. It's all about experimenting. I also found that I used far less coconut milk in the can to the same volume as I did heavy cream to achieve the same taste...

    The coconut milk is in our supermarket (the usual, everyday one). It used to be in the health food section, but they've moved it to the Asian foods section now, as @KnitOrMiss said. Indian markets, Asian markets, are apparently a lot cheaper, but I don't have time for shopping around.

    Ahhh, if you've found some in Oz, Granny, then we should have some somewhere in England. I was thinking maybe it was a US thing, but thats reassuring. I'll have a real good hunt tomorrow.

    If i can find some zero carb coconut milk i will be a verrrry happy Coconutty :)

    OK, im sitting here with a glass of plain water and ice. I love your analogy about not washing your clothes in coffee. It made me realise that i dont consume anything purifying and cleansing. Im going to just have to get used to it. Who knows, maybe i'll even learn to like it?! If drinking it gets me out of my stall i may well learn to love it! :)

    *blushes* Why thank you. I personally don't see why anyone would want to interact here impersonally, but I'm kind of wacky anyway. I find that helping people fulfills my passions in a way my job does not, so really, this is very satisfying for me in a soul-quenching way... :) I'm so glad to know I've helped. It makes my day.

    I forget where I heard that washing reference...somewhere along the way. And yes, it sucks at first, but so do a lot of things that are good for us, like giving up all the carby junk we like. And even if you don't ever get to a point where you LOVE water, you hopefully will get to a point of tolerating it. Sometimes switching up your drinking apparatus helps, too. If the clear part is off putting, put it in a colorful glass. I personally LOVE cold water with just a teensy bit of ice in a solid glass (think pint glass). Something about the whole presentation makes it "taste" better.

    Haha, ive never seen those doctored up gallon jugs before - great idea! Really made me smile. I need all the encouragement i can get.. i might give this a try if i can find a gallon container somewhere. Hell, i bet youd lose weight just from lifting the darn thing to your lips and back down - its huge!

    I'll look for that brand. And the blend sounds interesting too. But I must say, the one I chanced upon, tastes really good. I don't know what Chai is, I'll google it later. But I did also find some unflavored gelatin and was wondering what I can make with it? (I'll start a new discussion).
