Cauliflower Rice

Anyone try making cauliflower rice yet? I tried it last night and I gotta say I really like it! Lower in the carbs (1 cup is about 5 carbs vs. 44 carbs for white rice) and also lover in calories (1 cup is about 27 calories vs. 205 calories in white rice). It take some time to make and causes a mess. I went ahead and pre-bagged several 1 cup servings and placed them in the freezer. Anyway thought I'd share!

    Next you gotta try Spaghetti Squash, then you'll have your pasta covered. :)

    No, I haven't tried it yet, I did chop some in the processor, but never got around to cooking it.....partly because I didn't know how to finish it off... I have tried the mashed cauli-tatar ( my word) They were interesting..I can see how they might be a sub for mashed potatoes...if a bit thicker than I had mine. has anyone tried them?

    I have not tried cauli-taters yet but have heard they are a great way to sub mash potatoes. I did make more cauli-rice last night and I think I'm really getting the hang of it now. Cut the cauliflower into smaller pieces and don't fill the processor too full, I stop at 1/3 full. You want to just pulse the processor until the cauliflower has just barely broken up to rice sized pieces. If you go too far you end up with mush. And then when I cook it I saute it in a pan with olive oil spray and a pat of real butter. A little salt and pepper and let it lightly brown. It really tasted great and gave me that rice texture/feel without the added carbs of rice. Next to try the cauli-taters idea!

    My aunt makes the best caulitaters. She cooks the cauliflower just until soft, then mashes in dairy and a little salt, and maybe something else that I'm forgetting. So good!

    Thanks for the how to finish!1 I thought maybe I was supposed to boil them. I like the idea of the stir fry type better. Will try again. My husband hates to se me bring them in says they smell up the whole house...


    zcb94....I think I added some cream cheese. but I got them too soupy.

    I tried making cauliflower rice for the first time today and I love it. I sautéed in coconut oil then added garlic and onion powder,himalyan salt and paperika then tossed in green onion. It was really good.

    This does sound yummy, will have to try it this way.
