A Request from Hubby

When I go low carb, my calorie intake automatically adjusts to around 1500-1800 calories per day, to the point where I have to make sure I eat enough.
My husband's calorie intake...not so much. He's hungry all the time and has requested that I figure out some zero-carb snacks that he can eat without restraint. Yesterday evening, after dinner, he ended up frying 2 eggs (plus cheese) and still looking for more that he could eat. He's not worried about calories, as he tends to lose on low carb whenever he tries it but ends up falling off because he's hungry.
Any recommendations for 0 carb snacks? Especially portable ones? He won't eat anything with coconut in it, so that knocks out most of my fat bomb recipes. Sweets aren't his downfall, it's snackfood.
I plan to make pepperoni chips and salami rolls (with mozzarella inside).

Cheese with butter? I make cheese chips by spreading shredded cheese on baking parchment and baking it for a few minutes until it's bubbly and brown. Avocados have low net carbs.0

Bacon jerky. It'll slow him down, give him plenty of sodium, and carbs are usually close to zero.0

Cheese sticks, salami rolls with cream cheese, boiled eggs (I keep these in the fridge always), they sell a product called "Just the Cheese" on Amazon (it's cheese baked into a crunchy cracker type snack). My hubby is a snacker too, so I try to keep these types of foods available for him. I haven't "snacked" for several months (success!). Also pork rinds and they can be used to dip egg salad (or tuna, or chicken....salads)
Btw: the "Just the Cheese" comes in different flavors, and is worth it. They come in single serving bags (which I recommend), but also come in four serving bags (it would get stale before finishing, for me).

Checking into the Just the Cheese stuff. I'll have to ask hubby if he wants to spend that much on an experiment (if so, I'm voting for pizza flavored!). Thanks for mentioning boiled eggs, I should make some up and devil them!0

Your post made me think of something I just read, but before linking - why is your husband doing keto? Does he have known problems with higher carbohydrate intake?0

His entire family is overweight, diabetic to the point of eye problems, etc. He isn't diabetic (yet), but he's very overweight and is hoping that losing some will help his back problems and migraines.0 -

Got it, this doesn't apply then, but will post the link just because it is always good to learn.
This guy had an issue with ketosis because his body didn't have normal abilities to derive fuel from fat intake. https://www.reddit.com/r/keto/comments/3vfozs/keto_isnt_for_everyonea_cautionary_tale/0 -

Wow, that's interesting!
I wonder if DH could have that ... he doesn't follow keto but generally tries to eat healthy and there are times when he feels terrible and massive amounts of sugar (like drinking lots of OJ, cranberry juice, etc.) makes him feel much better. It seems so screwy to me since I was lower-carb for years before switching to keto (IR, formerly prediabetes, etc.) but it really seems to work. He gets lots of blood work done b/c of his CAD and doesn't have any hints of diabetes.0 -
I've been on my keto diet for 3 weeks and while my hunger has subsided immensely, I'm still always, always hungry. That last bit is just there.
If I have bacon and eggs for breakfast, it helps a lot. Not sure why, but having a fairly substantial breakfast helps me through the first half of the day.
For snacks, I'm still trying to figure out things, but what works for me so far:
- Celery with peanut butter. I don't do a lot of peanut butter, but it helps a lot.
- Pepperoni heated in the microwave and a slice of colby jack cheese. As close to pizza as I can get. Heating the pepperoni was an amazing change for me on this.
- Jimmy Dean turkey sausage. For snacking, I prefer the turkey over the pork. I buy the cooked, frozen patties and heat them up in the microwave. I just eat them that way.
All of these are reasonably high calorie by the time you eat them, it takes the edge off for me.

I know this is completely different than what other people have suggested but what worked for me when I would get hungry before I ate I would drink 16 Oz of water and I always drink at least 16 Oz every 2 hours (often times more) but I only drink 150 Oz within an 8 hour window and I eat usually within a 10 hour window. It's just something that helped me (and eating my biggest meal first thing in the morning )0

He's doing good to drink water, period. I bought him POWERade Zero and the flavored sparkling water from Walmart to see if he'd drink them. So far, yes.0

I thought it was worth a read and a mental note, glad you found it interesting!0 -

Could it be the beverages? I know when I consume sugar substitutes, I get ravenously hungry. If I keep it simple--black coffee, plain water, unsweetened tea, no processed foods or sugar substitutes--I can manage my hunger much more effectively.0 -

I am obsessed with making protein pancakes, and the simpler the better. I am not usually concerned with taste though But I made some the other night and they were pretty good and the macros came out well - might take care of his sweet tooth!
The ones I made -- 9 Tbs Egg whites (the kind in a carton - 75 calories, 15g protein, 0 carb/0 fat) plus pinch of xanthum gum (thickens and makes you crazy full feeling!) plus 1 tsp baking powder. Mix and then use electric wisk until it gets thick and looks like whipped cream (3-5 min). Then add 1 scoop protein powder - I used Level 1 1st Phorm Vanilla Ice Cream (140 cal - 24g protein, 4g carb,3g Fat), and any flavorings you want (i put sugar free davinci syrups in or chocolate powder, Peanut butter etc) and stir. Add a Tbsp or two of water if needed. Then cook like pancakes.
Without frying in oil or putting the butter on top or any additions in it etc, it came out to 215 calories with 39g protein, 4g carbs and 3g Fat. If you fry in coconut oil and/or top with butter and heavy whipped cream, the fats go up to whatever you want. If the protein is too much, could use 1/2 scoop or carb quick I guess or something.
Because the eggs get all whipped with air, one batch makes about 6-8 medium size thick fluffy pancakes - it looks like a lot. And the xanthum gum in anything makes my stomach feel crazy full.
Helps me when I miss carby sweet stuff0 -
pork rinds (I particularly like the hot & spicy, chili lime and sweet heat BBQ)
string cheese
mini baby bell cheeses
lunch meat and cheese rollups (can rollup around a pickle too if he wants)
beef jerky
leftovers (grilled chicken breast and pork chops are pretty good cold)
fry up a 3 pound package of bacon and he can heat up what he wants in the microwave (I do this every week anyway because we use it in our cauliflower fried "rice", cabbage stirfry as well as for quick breakfasts and on wraps (lettuce or low carb tortillas)0 -
^^ cauliflower fried rice-
mind giving us what you do to make sounds yum0 -
Is he getting enough fat for satiety? Maybe he needs to eat more for meals than he has been eating?0

If you can find miracle rice/miracle noodles, they are very filling (they're pretty much all fiber), so I would do miracle rice with alfredo-type sauce (mostly cream cheese and other cheese). Also, boursin cheese is yummy and super filling. When I crave something sweet and snacky I whip heavy cream with a bit of sweetner and sugar free cocoa, and stuff my face with that. Also, another thing that works with me is going for a walk. A lot of time it's not a hunger but boredom that drives us to eat.0
