I found a recipe for a low carb bread that toasts well, and now I can't find it (catastrophe!!!)

Does anybody have one to recommend (that toasts well, I have recipes for almond beads etc)

Thank you xx

A friend gave me a recipe once and she makes toast, but I never tried it. I will see if I can find it.

    I found it!

    Psyllium Husk Bread

    Ingredients

    1 1/4 Cup Almond Flour
    5 Tablespoons Psyllium Husk Powder
    2 Teaspoons Baking Powder
    1 Teaspoon Sea Salt
    3 egg whites, whisked
    1 cup boiling water

Preheat oven to 375 (350 if convection)

    Mix dry ingredients

Add in eggs and mix until well blended

Add in boiling water and stir vigorously until a wet dough is formed

Place on a lined cookie sheet and form into a loaf

Bake for 45 minutes and do not remove early.

Note: I put mine in muffin tins but I will try forming it into a loaf pan next time. 45 minutes was right on target. It's delicious and doughy...reminds me of real bread. Enjoy!

Let me know how you like it, eventually I want to try it. I think I just never saw psyllium husk powder anywhere and haven't taken the time to search it out.

Psyllium husk is the main ingredient in many fiber drinks. Any good health food store will carry it.

Peanut butter bread toasts well. Very easy to make. I'll find a link.

    https://www.pinterest.com/pin/A70jNgAQQFcF6X0kZ3gAAAA/

1 cup natural almond or peanut butter, smooth
    3 eggs
    1 Tablespoon vinegar
    1/2 teaspoon baking soda
    1/4 teaspoon salt
2 servings Stevia (or other sweetener)

I like it cause it uses things I regularly stock and it is very easy. It's a little moist so toasting works perfect for it.

@phxteach, I am in Dallas,TX. But if you go to one , it is in the deli section in the refrigerated breads. If you don't see any ask the deli manager, they always store them in the freezer.

@robeylori - I'm in Phoenix and just found out that Sprout's here do carry it, but are also often out! They should make more of this stuff. Thanks for the helpful info.
