What veggie recipes do you love?

im wanting to start trying new veggies recipes! There are so many veggies in the produce area that I have no clue what they are or how to make and would like to try! What do yall eat and how do you prepare them?

    The veggies I do eat are:
    Mushrooms (fresh or canned, sauteed in butter with or without hwc)
    cauliflower (roasted is first choice, mashed is second)
    Cabbage (sauteed in butter or coconut oil, or sliced then roasted in oven)
    Brussels sprouts (same as cabbage)
    Salad mixes in a bag

    My favorites are:

    1. Baked broccoli. Remove most of stem, drizzle florets with olive oil and sea salt. Bake at 375 for 15min and sprinkle with parmesan cheese.
    2. Cabbage with chorizo. Pan fry 1-2oz of chorizo. When cooked, add 1 cups shredded or diced cabbage. Cook until tender. For breakfast, mix in a fresh egg and scramble.

    Veggies I love:
    Creamed spinach (when I'm not trying to limit dairy) or creamed kale.
    Spring mix with olive oil, salt, and pepper.
    Stir fry veggies.
    Spiral sliced zucchini with pesto and parmesan (I finally tried out my new spiralizer this weekend).
    Spaghetti squash with butter or with spaghetti sauce (I recently learned you can cook a spaghetti squash in the slow cooker, and my life just got that much more amazing).
    Asparagus with butter, garlic, and spices.
    Portobello mushroom pizzas (broil the mushroom caps and then put toppings and cheese and broil again).
    Zucchini boats (cut lengthwise, scoop out the seedy center, fill with pizza toppings and top with cheese).

    Stuff I want to try:
    Stuffed peppers.
    Cauli-rice.
    Broccoli cheese casserole.

    I just make it like creamed spinach, but with kale instead. :)

    Not to sound dumb but do u have a recipe for the peppers I haven't heard of putting cabbage in it... Going to look up spinach pie sounds great. My SIL and BFF make a tomato pie (both have different versions). And oh my so good!
