to bake or not to bake?

Hello All, I am new to the LCHF lifestyle, been doing it since early January and loving it. For the first month, I was absolutely strict about avoiding all grain-related foods but recently tried coconut flour pancakes and wow, so yummy, really hit the spot. Now I am eyeing a low carb bread recipe made with flax and ground almonds. There's no sweetener of any kind in the recipe.

However, I DO want to continue losing weight. Do any of you eat the occasional homemade LC baked treat and does this affect your weight loss? I plan to budget the carbs (and calories) into my daily MFP goals.

    We occasionally eat recipes made with almond flour and it didn't stop our losses.

    I think that's a really individual thing. For me, it would probably slow me or stall me, but I'm insulin resistant, and right now my insulin reactions are overreacting at anything resembling and old carby food. If my mouth thinks it's a carb, my body reacts like it is - even when it isn't - creating chaos. So I'm back to avoiding triggers again.

    It is very individual. I don't have any metabolic issues but tend to be better simply abstaining from even the low carb versions of high carb things.
    I'll admit I haven't tried the bread like items that use the special flours, and I don't think that as a sometimes item it would be a problem for me. I honestly just don't miss that stuff. Sugar was my issue before. Plus those ingredients are pricey for me and I just never really ate any kind of bread or muffin even before so I haven't even considered it now. I would only eat bread that was on sandwiches but I don't miss that one bit. Even when I have pizza, I just make it without a crust. Never have any desire to try those fathead recipes. Just don't seem worth the time or cost more than anything.
    Just my opinion for me though. There's no reason you can't try things out if they interest you. Just pay attention to if you seem to get cravings or anything from it. Lots of people don't.

    I haven't made anything more than one fathead pizza in almost a year of being in ketosis. No desire for any of that stuff. It's okay to try things like that, and see if you have any negative side effects. But, as long as it fits into your day, go for it! Welcome too! You've found a group of wonderful people here who care!!

    How do you make a pizza without crust? Do you make a crispy cheese "crust" first?! I'm confused and intrigued cos I love pizza. :p

    I know some people do the baked cheese crusts, but I've been making pizza bowls for lunch lately and they've been sooo filling! I found some low carb fresh pork meatballs, I pull them apart into little pieces like sausage on pizza and pan fry them with mushrooms, red chilli peppers and cheese. It's totally satisfied my pizza cravings. I can't eat tomato sauce because it puts my blood sugar up, but if you don't have that issue with tomato products, you could toss a bit of tomato sauce in there too, along with any other pizza toppings you enjoy.

    I agree it's individual; experiment and see how it affects you.

    Also, I love a simple skillet pizza: Just put mozzarella in a small frying pan/skillet, enough to cover the bottom, top as desired, and cook on medium til it gets crispy. Forms it's own crust and is very tasty. I sometimes dip the slices in tomato sauce or eat plain. Totally satisfies any pizza cravings.

    I've done well with paleo bread, which is made with coconut flour. That being said, it's dry as bone, I don't particularly enjoy it like I would wheat-based bread, and it's usually just a vessel for my peanut butter / butter / cheese. Still losing weight!

    I say to each his own :) Listen to your body, and what works for you.

    Thanks everyone! I like the skillet pizza idea, will give it a try. I think I'll try doing a baked treat once or twice a month and see how that works. I do miss really good bread.
