Quick, easy healthy recipes?

I work, have a family, ballgames, etc... Probably as most. Just looking for quick and healthy throw together meals? Thanks

    I'm a big fan of crock-pot recipes. Put the ingredients together the night before, put it in the fridge, and in the morning pull it out, turn it on, and it's ready when you get back from work/games/running around.

    - not counting the rice or noodles you put it over it's between 230-350 calories depending on how big your servings are.

    Or, if you're looking for non-crock pot ideas, these are my favorite breakfast and dinner combos. Full of lean protein, veggies, and deliciousness.

    - completely adjustable to what veggies you like and don't. For example, I put leeks in EVERYTHING. Super good. About 160 (ish) calories depending on what you put in.

    - make the salsa ahead of time and make double or triple the quantity - it's super tasty over salmon, chicken, or pretty much anything. Plus it's full of fresh fruits and veggies - healthy and easy. I make mine without the couscous to cut out some carbs and calories.

    One of the best things for me is to do some prep on the weekends, or the cook once, use twice method. On the weekend I like to make some type of casserole, soup or pan of enchiladas type thing. These are easy to round out with a quick side salad or a slice of bread/roll w/ the soup. Skinnytaste website has a lot of great dishes that are all reasonable in calories and full of flavor. Also, if I'm cooking up some chicken on the grill, I might make extra. I can use the extra the following day in many dishes - shred the chicken for bbq chicken sandwhiches, chicken quesadillas, chicken salad, etc. In a pinch, I go for breakfast foods - eggs and oats, fast and easy.     Crock pot recipes are great as you can put the ingredients together the night before, then put in the the heater the next morning, turn it on low and when you get home you can eat. You can make homemade chili, pasta sauce, soups, etc. Is there something specific your family likes? Are you looking for dinners only? Someone I know made this great grits, scrambled eggs, shredded cheddar cheese and chopped up breakfast sausage links and let it warm together in the crockpot for a brunch and it was fabulous (and I wasn't a grits fan)!
