What do you eat on your fast days?

I thought this might be an interesting topic to get a little activity on this group.
What do you eat on your fast days? Do you eat one meal and maybe a snack (depending on size of your meal) or do you try to portion 500 calories of something you can snack on throughout the day (i.e., trail mix)?

I've combined 5:2 with 16:8 IF window so I eat one light meal and a snack if there's room. Monday I had some chicken and broccoli and then a little bit of trail mix later. Today I had yogurt and will have a piece of salmon for dinner.

    I try to eat only 1 meal. It seems easier to me. My main goto is a cheese omelets with lots of veggies. Then I will have either salad or yogurt or nuts to get me to the 500 calories. Love omelets. I've only been doing this for a month. Sometimes I'll have chicken
