Go-to breakfast: Egg "Pancake"

I accidentally made this the other day, and I was surprised how tasty it is! It also reheats well (and actually tastes alright cold), so you can prepare these the night before.

Makes 1 serving
• 2 Eggs
• 2 Tbsp Organic and/or grass fed heavy whipping cream
• 1 Tbsp Isopure Vanilla Protein Powder
(Or unflavored powder/sweeter/vanilla extract to taste)

• Whisk all ingredients together, making sure the protein powder has fully incorporated into the mix
• Pour into a preheated skillet, medium heat
Cover and let cook for 5-7 minutes, until easily flipped
• Flip the pancake, re-cover and cook for ~ 2 mins
☆Bonus: Sometimes this mixture puffs up like nan after flipping. It's fun to see!
• Eat plain or top with desired toppings
I've added cream cheese and berries: it's almost as good as IHOP's stuffed crepes!

    I've made these with 2 TBS cream cheese instead of cream and some cinnamon - had them with peanut butter. Yummm!

    I haven't got any protein powder. Could I use coconut flour instead?
