Hello everyone!
I am really struggling to find a better variety of recipes for this whole way of life - I feel like I just keep doing the same things maybe just in a different way. Also I'm super picky about textures so it's hard for me to eat seafood or eggs or just like - weird soft but crunchy at the same time and I kinda have the same texture problem with things like squashes and some other vegetables.
Let's share our favorite recipes here to help each other out! Any meal of the day - even dessert! I seriously need some good fat bomb recipes!
Anyways - here's one that I found that I absolutely LOVE!

Instead of the pork rinds (since hubby doesn't care for) I used crushed up French's Fried Onions - so amazing!

I don't make a lot of "recipes". I live in a house with 4 growing kids and a husband who probably eat lower carb (the kids in particular) than many of their peers but are not keto or anything. I tend to make a meat, an above ground veg in abundance and a small starch (tonight it is baby gold potatoes).
For a recipe though, tonight I did a boneless blade chuck roast in the Crockpot with 1/4 cup water, garlic, generous salt, black pepper and Ancho chile powder. It's pretty freaking amazing taste wise, with a hint of heat and the texture is fantastic. Also, as meat goes it's got a pretty great keto profile, with fairly proportionately even fat grams to protein grams.1 -

Low Carb Cream Cheese Jalapeño Hushpuppies.
8oz. cream cheese.
4 jalapeños with seeds removed, diced.
56g ground pork chicharrón.
1 egg well beaten.
Mix first two ingredients, roll into 10 balls, place in freezer on cooking sheet for 10-15 minutes until set.
Prepare egg and chicharrónes in separate dishes. When the cream cheese jalapeño balls are set, roll them in the ground chicharrónes and then the egg bath, and then once more in the chicharrónes.
Deep fry or pan fry @ 365° for 1-3 minutes or until golden brown.
Bake @ 400° for 8-10 minutes or until golden brown (no additional oil needed).
Serving size: 2 hush puppies
Approximately 236 calories, 21g fat, 3g net carbs, 11g protein when baked.
