Low Carb Quiche - I forgot how good it is.

    I frequently make a crustless quiche very much like this, swapping in sausage, ham or cooked bacon according to what I have on hand and adding thinly sliced red onion. I noticed that this recipe didn't include directions to coat the pie pan with cooking spray; I always do that to make sure the slices come out all nice and purty. I use Greek yogurt in place of cream; I don't always have cream and the yogurt adds a nice tang. Be sure to follow the instructions to let it sit before cutting or you'll end up with a bowl of custard.

    Quiche is actually better the next day so I've made this the evening before, covered the pie pan with plastic wrap, chilled it in the fridge and served it to guests for brunch after it's come to room temperature. Never had any complaints about the missing crust. Add a substantial salad and everybody's happy.

    Oh, and a light dusting of paprika lends a nice touch of color.

    LOL. I have a couple of things in the refrigerator I want to use up today none of which will work in a quiche or frittata so I MADE myself put the items in my diary for today even though what I want now is a quiche or frittata. :p

    Quiche is a great way to down the fats for Keto love them. You can make them with so many goodies and very filling.
