So I started with 20 NC for 2 weeks, then went up to 25 NC this past week. I weighed myself and gained 2 pounds from last weigh in!!

How frequently do you weigh in? I weigh daily at almost the same time each morning. Then I look at the trends over the last several days. Keeps me from panicking if I put on a pound or two.

I wouldn't be sane if I weighed in everyday. I weigh in weekly

The extra 5 carbs isn't likely enough to cause you to gain weight, at those levels. It's a single weigh in. See where you are next week, and then keep at it for even another week after that. It can take a month or more before real trends can be seen, especially with few data points.
