Coconut oil Mayo?

I found a recipe for this and as soon as I get to the store for more eggs I'll be trying it, I always make my own with just olive oil never thought of using coconut oil until I found the recipe Have any of you tried it? If not I'll be updating as soon as I can to let y'all know if it's good

Yes, I did try it. I found the coconut flavour overpowering and it just didn't 'agree' with my tastes. But then, I'm Italian, and maybe a bit of a purist, but my H. didn't much like it either.
Our local supermarket sells coconut oil with the flavouring taken out (!) but I'm not sure how much they have messed with the original natural product, so I'm not really all that keen to try it.....1 -
I like the taste of coconut oil, I use organic unrefined, as natural as I can find in stores around here...So this will be interesting By the way I've HATED Mayo my whole life until I started Keto now I'm in LOVE lol funny how everything tastes so much better when you cut out all the junk0

I found one that uses a combo of coconut oil and MCT oil, but you kind of low level custard style cook the yolks only, and I'm not sure I like that idea.
I have another one, I love, however. It is a Whole30 Compliant one, but you can swap out the oils. Someone told me it was great tasting with straight MCT oil. I only have Unrefined Coconut Oil at home, and since I hate the taste of coconut, I didn't want to go there... LOL I was thinking about half regular olive oil, half MCT, since I didn't want to drive to the other store to get the Light Tasting Olive Oil...
I did love it though, when I made it before, and even used the end product to make Sriracha Mayo and such...

@Cadori - do you have a favorite brand or suggestion? I've been needing to pick up some avocado oil for my facial serum (yes, using the cooking stuff works...lol - as @my4andme333 points out with CO, too...) and might try that instead of olive oil since there's so much fake olive oil out there...0 -

I have been experimenting with EVOO and avocado oil mayo. Too much of one or the other just doesn't seem to taste right. So I have settled on 1/4 cup of EVOO to 3/4 cup of avocado oil. I love the texture and taste of that combo.0 -

@retirehappy - Everything I see says specifically to use LIGHT TASTING OLIVE OIL. EVOO tastes too strongly for mayo. I did a LOT of research a year or two ago... Or if you use EVOO, use maybe 25% of it, then something with taste like MCT... I dunno about Avocado, but black walnut was suggested, and a few others.0

Straight, regular coconut oil does make a solid mayo, I've tried. It's a bit weird, too, because it looks like mayo, but... It's solid...1 -
Thank you all for the advice I have yet to make it, 4 kids will make it hard to find time LOL. I'll make a small batch and if it doesn't turn out I won't feel too guilty if I chuck it lol I also might try a small bottle of avocado oil if I can find a small one, if I don't like it my mom loves avocados I'm sure she'd use it1

Yes, it is and it has a high flash point, 500F. I use it a lot.1 -

Yes, light tasting oil!
I've used extra light olive oil and I've also used avocado. Both taste the same to me. Where I find the difference is in my acid choice and amount of salt. I've used lemon juice, white vinegar and pickle juice as my acids. My favorite batches have been with lemon juice and plenty of salt.
One kind of odd side note: I usually use the mayo for egg salad and when the mayo is made with avocado oil I am full forrrrevvvvver.2 -

It is so fast and easy!
I take a 2 cup pyrex measuring cup, crack an egg into it, juice a lemon and pour on top, put in a pinch of salt, add a cup of oil (all this takes less than 2 minutes). Put my immersion blender in all the way to the bottom, press the button and immediately watch the cloud of mayo blossom. Hold it still for 20 second and then move it up and down a few times to mix in any extra oil on top.0 -

Better yet, use a jar that's wide enough to accommodate the immersion blender. Built in storage container!3 -
Yes, I have a wide mouthed canning jar, it is perfect for the immersion blender and when done, just put on the top and pop in the fridge. I can't imagine buying mayo ever again it is so dead easy and more flavorful too.1

I couldn't see buying it ever again either. I HATED Mayo until I started Keto, then it began to taste good, but I never did make my own before, I started making it when I started Keto. So it could be why I like it so much now lol...I still haven't had the chance to try the coconut oil, I ate all the eggs HAHA! But I just got some fresh ones and I'm determined to make it now lol1

I use avocado oil based mayo by Chosen Foods. Found it in Costco (so much cheaper than the grocer), Tastes good, but I add a little bit of lime juice to my salmon salad for some extra flavor. I made my own mayo with olive oil last month and it turned out to be too bitter and it separated.0
