Could "bad" carbs have SUCH an instant effect?!

For years, I had a permanent sensation that my knees and ankles were on fire at all times, but especially at night. Not exactly pain, but a sort of inflamation and deep ache that I just got used to. After the first month of eating low carb (15-30g), the sensation COMPLETELY went away. However, yesterday I had two handfuls of salt and vinegar chips. I did not go crazy but I wanted them and I had them. This morning I woke up with diarrhea (sorry) and this afternoon my knees and ankes hurt like hell. I can't believe it would be the chips, but it's the first time in about 2 months that I had such empty carbs and I can't figure out what else could have caused that familiar feeling to return. Could it be that such a small sidestep would have such an immediate effect?

    Happens to me. I wonder if it happens to LCHF folks who've been into this WOE for a long time?

    Yes! It's unbelievable what our old foods were doing to us! Isn't it wonderful to be in a nutritional place to see the difference?! Way to go!!

    Yes, my reactions to inflammatory foods happen quickly, anywhere from 4-48 hours after eating it.

    Potatoes are part of the nightshade family of foods, along with eggplant, peppers, paprika, and other spices. Many people have an inflammatory reaction to nightshades. The flavorings in salt and vinegar chips are often corn-based (at least the brands around me are) and corn is a common food that triggers inflammation, too.

    About 2 1/2 weeks into keto diet I tried a propel drink, it was crazy almost sickening sweet. I could only drink half of it. It was my first attempt at outside sugar/sugar free on the diet. Within half an hour I got my only headache on this WOE. It was sudden and very uncomfortable for a few hours. I was just surprised it would have such a quick negative response. (Last year I was one of those diet soda people.) You better believe when I add sugar substitutes back in it will be in very small proportions and with care and not for a while.

    Bloat. Within a half-hour of eating, I feel uncomfortable, stuffed, bloated and distinctly pee'd off.
    It's only happened once.

    Not doing that again.

    Sugar starts getting digested/absorbed in your mouth, it is very quickly handled by our body. This doesn't surprise me at all.
