Coconut flour

Do any of you bake with coconut flour?
I made what were supposed to be cookies, but the mixture was too runny so I put it in a muffin tin and they came out vaguely cake-y but a bit bland (the recipe was literally coconut flour, eggs, baking soda and butter). I might try them again with peanut butter in the centre, but does anyone have any other ideas or recipes for biscuits or cakes?

I made this as cupcakes and put cream cheese frosting. They were very good. http://www.dropthesugar.com/sugar-free-coconut-flour-cake/ I use pyure for sweetener if anyone cares. lol0

It was cake like and delicious! Maybe a little thicker, but it's been so long that I've had anything different. Even the sugar eaters enjoyed it though.
