Coconut flour

Do any of you bake with coconut flour?
I made what were supposed to be cookies, but the mixture was too runny so I put it in a muffin tin and they came out vaguely cake-y but a bit bland (the recipe was literally coconut flour, eggs, baking soda and butter). I might try them again with peanut butter in the centre, but does anyone have any other ideas or recipes for biscuits or cakes?
Thanks pals!

Was it like normal sponge?0 -
It was cake like and delicious! Maybe a little thicker, but it's been so long that I've had anything different. Even the sugar eaters enjoyed it though.

I wanted to try these https://lowcarbyum.com/basic-coconut-flour-cookies/ and these https://lowcarbyum.com/cream-cheese-cookies-gluten-free/ and I haven't yet. @CRZYFTM might have something already tested.0
