Non-boring chicken recipes?

I have lots of thighs & breasts and my freezer, so I'm looking for some new chicken recipes - lately it's been "same old, same old."
My usual go-to's are balsamic reduction; lemon-garlic; terriyaki; or burrito bowls. Getting tired of making the same things over and over, so I'm looking for some new and tasty chicken recipes to try out! I am new to this whole cooking thing, so easy & quick recipes are appreciated. Bonus points if you add what side dish you make with it!
Things my husband or I don't like:
mushrooms
mustard
curry
mayo
excessive amounts of peppers

Chicken Gyros
Marinate the chicken with a bit of olive oil, red wine vinegar, lemon zest/juice, oregano and garlic. Grill and slice. Add to naan bread or pita with feta, lettuce, tomatoes, cucumbers, red pepper, red onion and tzatziki. This also works well as a salad. (Tzatziki is pretty easy to make but I usually buy mine at Trader Joe's and I get my naan bread there as well)
Buffalo Chicken Wrap
Season chicken with salt and pepper. Grill. When it's close to being done, baste the chicken with Frank's Red Hot. Slice the chicken and add to a tortilla with lettuce, blue cheese crumbles, red onion, and a bit of ranch. I also mix some ranch and buffalo sauce together for a dipping sauce if my calories will allow.11 -

I do broiled chicken cutlets. Less oil. Still taste great. Easier than frying. Serve with a veg and rice , potatoes, tater tots, french fries (if ur eating carbs) and a mixed green salad.

I made Better Butter Chicken last night. It was delicious. I know you said you don't like curry so you could leave out the tumeric and cinnamon. It would be more like a texmex chicken that way. http://www.foodnetwork.ca/shows/eat-shrink-and-be-merry/episode-guide/better-butter-chicken/

I made this cranberry chicken salad wrap recipe last night and it was really good. It calls for mayo, but I swapped it out for no fat greek yogurt and it worked great. You will probably like the taste better anyway plus it reduces the calorie count significantly. Hi! I made this chicken thigh recipe a few weeks ago http://allrecipes.com/recipe/234621/rusty-chicken-thighs/?lnkid=usspnt#. It seems super weird because it has maple syrup in it lol, but it was awesome! I made an asian slaw to go with it.1

I just made a new one last night
wrapped some slices sun dried tomatoes in a slice of pepper jack cheese and stuffed a chicken breast with it and topped the chicken with some Italian seasoning.

I made a great meal last night with cauliflower, whole wheat elbows, chicken breasts, and spinach, and a little mozzarella on top, and I was surprised with MFP said it was only 232 calories with 20g of protein. Btw, I cut the chicken breast into 2 pieces to make it more managable for diets.
Note to self: I probably would add a bit more flavor with spices or seasoning to the caulifower/elbow/spinach/cheese mixture. It was a little bland but it was good and filled you up.
Ingredients
0.50 cup, Whole Wheat Elbows
1 Piece, Boneless Chicken
79 milliliter, Diced White Onion
1 TBSP, Diced Red Onion
0.25 cup (28g), Shredded Mozzarella Cheese
1 cup, Cauliflower head- Raw
1 clove,Garlic (minced)
1 tbsp, Spices, dill weed, dried
0.25 cup, Chopped cilantro
Instructions
1. Preheat oven to 375 degrees F. Prepare onions, chicken cilantro, garlic, dill weed, and spices in advance if you can. Pound chicken breast and add seasoning.
2. Cook pasta into boiling water and drain in sink.
3. Cook spinach and add 1/3 cup water to pan while cooking and cover it.
4. Boil cauliflower until a little soft, not completely mushy, but can be pressed for your comfort.
5. While cauliflower is cooking, begin to cook the chicken breast.
6. Prepare pan with aluminum foil lined to add the elbows mac pasta, spinach, cauliflower, and cheese. Then place in the oven for 25-30 minutes.
7. Enjoy!

I made a super simple beer can chicken on the grill over the weekend. It was the best chicken I've ever made. I used 2 tbsp of EVOO, fresh thyme, fresh rosemary, S&P to coat the outside of the whole chicken and a little in the cavity. Grill an hour (DO NOT open the grill during this time). Open the lid and insert a meat thermometer. You want it to read 170-180 degrees. Try to keep the temp around 350-400* during this time. Bring it inside, cover with a foil tent and rest for 15 minutes. Carve and enjoy!2

I found this recipe, Easy Low Carb Pizza Chicken, and my whole fam loves it.
Ingredients
2 tablespoons avocado oil or olive oil
1.5 pounds skinless/boneless chicken pieces about 5 thighs
1/4 teaspoon salt sprinkle to taste
1/8 teaspoon pepper sprinkle to taste
2 cloves garlic minced
1 cup low carb pizza sauce or marinara sauce
5 slices mozzarella cheese
1 ounce pepperoni slices
Instructions
- Heat oil in skillet over medium high heat. Season chicken with salt and pepper.
- Add seasoned chicken and garlic to skillet. Cook chicken until browned.
- Pour pizza or marinara sauce on top. Allow to simmer until sauce is heated.
- Top each piece of chicken with a slice of mozzarella cheese and pieces of pepperoni.
- Cover skillet until cheese is melted or place skillet under broiler to melt cheese. Serve immediately.

Oh and darlin', if you want quick and easy, this is it ... PARMESAN CHICKEN
Ingredients
1 boneless, skinless, chicken breast
1tsp. of dijon mustard
2 tbs grated parmesan cheese
cooking spray
Directions
- Brush the chicken with the dijon mustard evenly on both sides.
- Pat cheese onto chicken to make a crust.
- Place on a baking sheet and spray lightly with the cooking spray ( this will help make it golden brown and crusty).
- Bake at 375 for 20 to 30 min... depending on your oven and the size of your chicken breast. Makes 1 serving.

An easy one..... dice about 2 cups preferred vegs into your casserole dish (or hot pot); add 1 cup pasta; diced chicken breast/s and cover all with a can of crushed tomatoes. Bake about 45 mins in moderate oven. If preferred, add grated cheese or serve sprinkled with cheese.
Alternatively, use a can of preferred soup (chicken, onion or potato & leeks) instead of tomatoes.2 -

Chicken Ramen made with Shirataki Noodles.
-4 c Chicken broth,
-2 cloves minced garlic, to taste
-2 tsp grated fresh ginger, to taste
-2 tbsp rice wine vinegar
-1/2 cup Coconut Aminos (health food section, or sometimes just near the soy sauce). Tastes very similar to soy sauce but without the carbs.
-cooked, sliced chicken (I prefer thighs), or meat of your choice. Pork is good, too.
-Veggies (cooked or raw, your choice) that you like/prefer. Some include shredded bok choy or napa cabbage, radishes, mushrooms (leave them out since you don't like them), green onions, broccoli, green pea pods...whatever you like.
-Shirataki noodles (I find them at the grocery store in the refrigerated produce section, usually close to egg roll wrappers. I don't like the smell of Shirataki noodles when you first open the package, so I open them over the sink and dump them into a colander while running water over them. Then I sear them off on a hot pan with some salt and herbs to match the dish.
-Soft-boiled eggs, at least one for each serving.
Briefly saute garlic and ginger in a large pot. Do not brown. Add broth and coconut aminos together. Prepare all other ingredients. Put noodles in a large bowl, cover with broth, and add in toppings as you choose. Top with a soft boiled egg cut in half. Eat with chopsticks.
This took me longer to type than it would to cook. It goes together pretty quick, especially if you use pre-cut veggies and leftover meat. I often will cook too much meat and save leftovers for this dish.0 -
I did a slimming world recipe for fakeaway KFC last night and It wasn't too shabby.
500 g Frozen Chicken Breasts
100 g, Plain Couscous
1 Chicken Stock Cube
1 egg
1 Cal Spray
0.25 tsp - 2.5g, Dry Mustard Powder
1/2 tsp, celery/garlic salt
1 tsp, Spices, pepper, red or cayenne
1 teaspoon, Ground Cumin
1 Add dry Ingredients to couscous (alter to your own spicy taste)
2 Cover mix with boiling water and leave to soak It up.
3 Whisk the egg and add to mix ( you may not need all of the egg)
4 Put baking parchment on a baking tray or spray with Frylight.
5 Coat chicken with couscous mix (can get a bit messy but persevere)
6 Cook 35 to 40 mins at 180° till crispy and at nice colour.
I served mine with sweet jacket potato and salad........yum yum...Enjoy!
