Preheat oven to 350 and grease a 4-5 inch spring cake pan with coconut oil. Then coat bottom and sides with coco powder.
In a bowl with a hand mixer
(or in your kitchen aid)
Cream together:
1/4 cup butter
3 tbls swerve
Add:
2 eggs
1/2 tsp vanilla
Stir in slowly:
1/4 cup coco
1/4 cup almond flour
4 tsp coconut flour
1 tsp baking powder
Stir around all ingredients then add:
1/4 cup HWC
Mix on high 2min.
Pour into pan and bake 30 min or until toothpick comes out clean from center.
Cool and top as you like.
Enjoy. (I haven't checked the macros on this yet. When I do, I'll update!

The amount of cocoa is a bit heavy. I'm a huge chocolate fan. If you aren't a "death by chocolate" fan, reduce the cocoa by 1/3rd or 1/4th.1 -
Hi @CRZYFTM , I’m thinking of making a chocolate Yule log for Christmas and I’m wondering if you’ve ever tried a roll up type of cake. I would be using both almond meal and coconut flour, making a flat sheet cake and rolling it up with ganache made with low sugar chocolate and heavy whipping cream. Any thoughts?0

That sounds amazing! This recipe would for sure work. Use a sheet cake pan and line it with parchment as alternative flour scan be notoriously sticky and problematic! Also, adjust your baking time per the thickness/thinness of your cake.0 -
