This sounds so good - even at 7 in the morning! I think tonight I'll have a steak "rice" bowl while everyone else has steak & potatoes!1

I picked up the organic cauliflower rice from Costco yesterday $4.49 and you can actually freeze it and use it up within 60 days. Anyhow I fried some in avocado oil, added celery and spinach and finally Costco rotisserie chicken with some TJ 21 spice blend. Oh yeah... it was good!!!0

It was really, really good. I used coconut oil instead of butter or olive oil, but I bet it would be great that way too.1 -
Thanks for posting that cauliflower/cilantro recipe @MistressPi. I have a bunch of parsley in the refrigerator that needs used (and a head of cauliflower) so just looked up a recipe including both and found a roasted cauliflower with parsley sauce recipe that will require most of the parsley. Thumbs up.
I love cilantro so will try the recipe you posted next.1 -
kpk you're welcome. I was nervous about including the jalapeño, but the result was not at all spicy - to my taste buds. could have been a particularly mild pepper, but with seeds removed and finely minced, having it mixed in that volume of cauliflower made the result just ... herby.1

I just bought this over the weekend...we are having it Wed night as part of chicken alfredo...everyone else can have pasta, I will try the "rice"1 -
