    One of my favourite clean/low carb meals is a sweet potato stuffed with ground Italian sausage that has been cooked up with celery, onion, mushrooms, kale or spinach or whatever veggies you want. It is delicious. As a breakfast variation I will cook up the sausage mixture to which I add grated sweet potato (like a hash) and stuff a large portabella mushroom which has been baked ahead. You can eat it like that but I like a nice soft egg severed on top. Soooo good and to think just 4 or 5 short years ago, I didn't eat sweet potatoes.
