Does anyone have a healthy meatloaf recipe that they would be willing to share.

    This is a South Beach Diet recipe:

    Parmesan Meat Loaf

    1 lb ground extra lean ground turkey
    1/2 cup grated lowfat parmesan cheese
    1 Tbsp Mrs. Dash or McCormick garlic and herb blend spice
    1 Tbsp onion powder
    1/3 cup low-sugar ketchup
    1 egg
    2 Tbsp parsley
    1/8 tsp black pepper
    1 clove garlic, chopped
    1 chopped onion (or 3 Tbsp dry minced onion)
    Optional: ½ finely diced bell pepper

    Mix all ingredients.

    Spray baking dish with Pam. Shape into an oval loaf.

    Bake at 375 degrees for 60 minutes


    Everyone has a different opinion of healthy. But, I also like this one. If you don't want the meatloaf mix, you could leave it out and just add your own spices.

    Mini Meat Loaves

    1 pounds ground turkey
    1 eggs
    1/2 cup Low-Sugar Tomato Ketchup
    1/4 cup dried bread crumbs
    1/4 cup milk
    1/2 package McCormick® Meat Loaf Seasoning Mix

    Preparation

    Preheat oven to 375°F. Mix ground beef, eggs, 1/2 cup of the ketchup, bread crumbs, milk and Seasoning Mix in large bowl until well blended. Shape into 4 loaves.

    Place meat loaves in 13x9-inch baking pan. Spoon remaining 1/2 cup ketchup over top.

    Bake 30 to 35 minutes or until cooked through.

    Spinach Stuffed Meat Loaf Serves 6. 294 cal/serving
    1 lb lean ground beef
    8 oz lean ground turkey
    1 small onion, finely chopped
    1/2 cup fresh bread crumbs
    1/8 tsp garlic salt
    1 Tblsp tomato paste
    1 egg white
    1/2 cup part-skim ricotta cheese
    1 pkg (10 oz) frozen chopped spinach, thawed and dreained
    1/8 tsp salt
    1/8 tsp ground black pepper
    2 large onions, thinly sliced
    2 carrots, coarsely chopped
    1 can (28 oz) crushed tomatoes

    In a bowl, mix the beef, turkey, onion, bread crumbs, garlic salt, and tomato paste. In another bowl, mix the egg white, ricotta, spinach, salt, and pepper.

    Preheat the oven to 350F. Turn out the beef mixture onto a large sheet of wax paper, and form it into a 9"x10" rectangle with your hands.

    Spoon the spinach stuffing lengthwise down the center of the meat, leaving about 1" of it uncovered at each short end.

    With the help of the wax paper, lift the long edges of the meat. fold the meat over the stuffing to enclose it.
    Using your fingers, pinch the edges of the meat together. Place the loaf seam side down in a nonstick roasting pan. Add the onions, carrots, and tomatoes to the pan.

    Bake for about 1 1/2 hrs, or until the meat and veggies are cooked through. Transfer the meat to a platter. Puree the vegetables in a blender and serve the veggie sauce with the meat loaf.

    I beat one egg, add 1lb of ground beef, sometimes I add 1/4 cup of parmesan cheese, I small dice or grate veggies (optional): onions, peppers, mushrooms, etc. Seasonings, like veggies--any and all optional: basil, oregano, salt, pepper, etc. Mix all together, form into loaf in loaf pan or small glass baking dish. (Can place meatloaf on top of bread heels to absorb the oils).

    Cover meatloaf with 1/4 cup of tomato sauce, lightly salt and pepper, bake 350 for 1 hr. Let cool.
