I'm running out of ideas for good low carb lunches... I did lettuce wraps last week which was delicious but I need some new inspiration! Help!

I frequently order a buffalo chicken salad from a place near my job but have been planning to try my hand at making it myself. Its a romaine/baby spinach mix topped with a grilled chicken breast tossed in a bit of buffalo sauce, a few crumbles of bleu cheese, bit of chopped tomato and chopped red onion. I'm IN LUV with this salad! I don't even put any dressing on it.7

I love greek yogurt and will honestly put it on anything. It's amazing with fruit and the yogurt has a lot of protein and is low carb.3

Tin of tuna, hommous, celery and carrot sticks, a boiled egg, and one slice of toast is my go to :-)
Mandarin and apple for snacks :-)1 -
2 hardboiled eggs shredded
1/2 avocado mashed
2 T low fat mayo
salt & pepper to taste
lettuce
Mix Avocado and eggs with mayo and add s & p. Roll in lettuce. Love it.16 -

Just had to let you know that I tried the eggroll in a bowl recipe and both my husband and I LOVED it! We loved it so much that I shared it with several people at work and they ALL raved over it! Thanks so much - that one is a major keeper!0 -

last night I was scrounging around for something to eat without going to the store.
I had a package of these chicken sausages from costco. I sauteed some onions, red bell pper and mushrooms with some seasoning, cut up two chicken sausages and topped it with a bit of shredded mozzarella cheese. it was delicious and filling and pretty low in calories too.

Spaghetti squash mixed with zucchini noodles, tomatoes, chopped spinach, sundried tomatoes, diced chicken.... pretty much any combination that you like and then 1.5 oz of goat cheese. When heated, the goat cheese turns into a kind of sauce that coats everything when you mix it up. Top with mozzarella to melt. Delicious and nutritious, and no starch! Looks beautiful if you put it back into the half spaghetti squash "shell." One of my MFP friends calls it my "goat boat."6

One of my favs: dice up 1 cup peppers, 1/2 cup diced onions, 1 can mushrooms and saute them together, when they are slightly softened add 1 can of low salt diced tomatoes. Heat up and pour over a serving of long grain rice or wheat pasta and serve. This usually is enough for me to make 2 meals out of. Love this dish and low in calories. If you want to add protein then pour mixture over grilled or baked salmon.2

Vietnamese chicken salad - shredded cabbage and chicken, with chopped mint, basil, jalapenos and scallions. Make a dressing of fish sauce, rice vinegar, oil and lime, with black pepper and garlic. I love baked chicken breast, white jasmine rice, avocado mayo I make myself, and sweet salsa. It's my go to lunch!0

I like taking left over meat from dinner, throwing in a bowl with mixed greens, cilantro, a dab of sour cream, sliced avocado, diced onion, black olives, salsa, cheese, some diced tomatoes or cherry tomatoes. Sprinkle of salt, pepper, and cumin.
My favorite lunch!

Shrimp stir fry with bell peppers and onion.
My go to salad of romaine lettuce, reduced sugar dried cranberries, toasted pecans, red onion, light feta cheese, baked chicken breast, and balsamic vinagerette (this is a salad from Chopped Leaf that I loved so much I learned how to make).
