Shelf stable meal ideas?

So in the related hubby thread, shelf stable foods were suggested so I wouldn’t feel like such a loser when I forget to pack my husband’s lunch or we don’t have leftovers he can grab. He doesn’t have a fridge but does have access to a microwave. He’s not really a fan of tuna but likes most other things, especially spicy things. Ideas?

    Believe it or not, I used to take HB eggs in their shells to work with me in the patrol car and they can even stay in a warm purse IN THE SHELL for most of a day safely. Take a shaker of spicy steak rub or a bottle of hot sauce to use with them. Also get one of those little soft sided lunch coolers and a travel 'ice' pack to put whatever food in to take to work. I use sturdy veggies like raw zucchini coins or sticks, cauli or brocc florets to dip into cream cheese which will also survive well in a mini lunch cooler. Or even if you can't get a cooler, you can do the veg with string cheese or just cut lengths of cheddar to eat with the veg in a baggie. I've done that in a warm purse too, lol. Nuts and Pepperoni are good choices too. Choose higher fat/lower carb nuts like fresh walnuts, pecans, macadamias if possible.

    I will admit I am also a fan of those cheap little cans of ham, turkey, or chicken - I open the can, dump juices or not as I feel, fork into a small bowl and break up/mash up with a packet of mayo and some spices (poultry seasoning for the birds is especially yummy, add a packet of mustard to the ham), scoopable with celery sticks or zucchini coins, or just use a fork, lol.

    If I know that I need readily available quick foods I will hard boil a dozen eggs, then peel them and keep them in a bowl in the refrigerator covered in plastic, so I can just grab them and drop them on a bowl of greens for a salad, or just chuck them in a sandwich bag for a quick meal. They won't go bad in a day.

    Also, if he has a microwave you can make scrambled eggs pretty easily just crack the eggs in a bowl and stir every 30 seconds until done...adding cheese or spring onions is easy, any other toppings like bacon or sausage would need to be pre-cooked, but once those are prepped they are an easy add. Raw eggs in the shell don't need to be refrigerated.

    Bacon flavored spam is pretty epic if you can find it!

    Can chicken is an easy drain/mix for chicken salad, I love mine with salt/pepper/garlic/tarragon...if you want it with mayo then you can buy the box of packets that are shelf stable - ditto for relish if you like relish in your chicken salad.

    beef/turkey jerky - love that stuff, it's a bit pricey, but usually quite satisfying.

    Hummus dip cups and veggies.

    There are some frozen meals now being made keto or LC - if he took them to work frozen they would likely still be cold or partly frozen at lunch time, he would just need to reduce the cooking time.

    Hot dogs will keep all day without refrigeration and as long as you stab them or slice them they will reheat in a microwave without exploding.

    LC noodles would be another easy take with something like a pesto...there's nothing in pesto that would go bad in a day at room temperature.

    Maybe keep these things around in those single serving grab and go packs:

    green olives
    black olives
    meat sticks
    cheese sticks
    peanut butter packets
    almonds
    peanuts
    sunflower seeds
    avocados

    Once he gets into ketosis he might not even care about a meal despite those long, active, 12 hour shifts he probably has as a nurse.

    Does he have the ability to bring a cooler bag? I buy things like meat sticks, hard salami, lunch meat, etc and put them in individual serving size baggies. Same with hard boiled eggs. I also buy the mozzarella and cheddar cheese sticks. I also will make a big batch of egg muffins at the beginning of the week for breakfasts. My H then just grabs a bunch of bags of whatever and takes them along in his cooler bag. Total sanity saver.

    The issue with most of these is they aren’t shelf stable. I can already pack these for lunch. He needs things at work for when I’m not home or he forgets his lunch.

    I’m gonna make him a “emergency box” of some of the ideas:
    Canned meats (not tuna)
    Packets of mayo
    Cans of nuts
    Jerky
    Sunflower seeds
    And maybe I’ll throw some quest bars in for emergencies

    Things I keep in my drawer at work:
    • smoked oysters
    • sardines
    • packs of tuna
    • packs of nuts
    • seaweed snacks (good crunch and salty, VLC)
    • Epic Bars (just check the carbs)
    • Jerky
    • Pork Rinds
    • canned ham

    I also keep packets of Stevia in case I want coffee or tea at work, mayo, and mustard.
