Low Carb + Low Histamine Foods/Foods that cross-react like Birch/Grass pollens

Hello Low Carb folks,
Does anyone here have experience with following a lower carb diet, that also follows a low-histamine diet, and also a diet with limited amount/avoidance of foods that cross-react like Birch pollen?
I am trying to re-start my diet, following a low carbohydrate plan. The issue I am having is that my Birch tree allergies and grass pollen allergies have suddenly showed up with allergic reactions to many low-carb produce that react in the body like Birch and Grass pollens.
Also, many of the foods that are considered low-carb are also very high in Histamines (most cheeses, all fermented foods, all pickled foods, all smoked/processed meats, most fish, or even fresh meats cooked and then sitting in the fridge, and much low carb produce). My body has a reaction to High-Histamine foods called MCAS (Mast Cell Activation Syndrome), and so I am trying to eliminate most of those foods, since I am now carrying an Epi-Pen everywhere I go due to scary allergic reactions.
To make it even more fun, my doctor has put me on two daily allergy/asthma meds that have made me gain 25 pounds since February 1, 2019 (I've gained 4.17 lbs each month), and on my 5'4" peri-menopausal smallish frame, 190 lbs is wearing me down.
If anyone else out there has any experince like me, I'd sure welcome your experience, strength, and hope.

Can you afford fresh steak every day? Have you tried high dose vitamin c? Sorry to hear you have such problems, I don’t think I can help but I tried.

I don't have MCAS, I have a lymphatic cystic disease. And I take some of the supplements listed to help with MCAS, off and on as needed for my health issues. Like Holy Basil is in my adrenal support blend, I take when under stress.
I also take ginger capsules and olive leaf extract for gut health and immune support, when I have a flare up for my disease I deal with. And I consume a lot of tumeric. All listed as things that also help MCAS.
I'm still learning what my trigger foods are that I have reactions to. Like recently discovered sriracha makes my stomach blow up. Somethings I eat make my throat tighten up, and I have to take an antihistamine, but I can't figure out which foods or spices cause it.
I take a whole lot of crap for immune support when my disease flares up: neem capsules and graviola tea. Astragalus and Dong Quai for hormonal balance, because hormonal changes along with stress can attribute to me having a flare up.

ALSO Emmapatterson1729 you mentioned certain foods cause your throat to "tighten"--you should track which foods. Oral Allergy Syndrome (OAS) is an issue whereby certain foods high in histamines, sometimes in the Nightshade family too (eggplant/tomatoes/tomatillos/any type of pepper and potatoes--not yams or sweet pots.) can cause certain reactions such as inflammation in the throat, sinus, mouth, eyes/nose, and even breathing issues for asthmatics.

Thanks! I should separate my foods and figure it out. My problem is it happens after eating something with a lot of ingredients and spices cooked in. So I've never singled out the culprit. I've been able to rule out certain foods I do eat plain.
Allergies are pain in the @$$.
I also get swelled and itchy hands from something I eat. And I've had my face blow up a time or two.
I constantly have to take Zyrtec and Claritin for seasonal allergies anyways, so I've never thought of it as a big inconvenience. I also have epi-pens for if it ever gets worse!
Allergies, food sensitivities, all of it blows!!0
