Shared Family Meal

If any of you are like me, family meals can be difficult to meet everyone's needs/wants in a meal. My son and hubby hate veggies, I don't like spicy or fried and of course I have special dietary needs. I tweaked a recipe I saw and made omelet bowls last night and it was a great hit! It did take a little extra time to prep, but I have tons of leftovers ready to go for other meals! Think about anything you would want in an omelet...I browned some ground turkey sausage and had chopped turkey ham available too. I'm the veggie person so I made a big serving of sautéed mushrooms, chopped spinach and red onion. I also cubed some cauliflower, tossed it with a little olive oil and baked it in the oven until it was caramelized (my "potatoes"). Next, I fried some southern style has browns (for the family) and scrambled some eggs. I also added small bowls of shredded cheese, chopped tomatoes, chopped green onion, and avocado. Everyone was able to make a personalized bowl with their favorite omelet goodies. We had it for dinner, but I had plenty leftover for a quick breakfast and now I have several prepped foods for other recipes this week. What are some of your go to family recipes now that you've had your surgery?

What a graat idea!! I do all my prep on Sunday or I'd never get to it during the week. They closest thing I've been able to get to whole family choice are Tacos bar. I can make ground turkey and ground beef for family. I've slowly been converting my family to all ground turkey. I put a variety of Taco shell options, corn, flour, and low carb. I also put half avacodos for those who want to out it in the avacodo for a Taco boat.

Samesies with ground turkey. They didn't even know the sausage was turkey last night LOL. I love avocados but I never thought about putting taco stuff in one. Good idea!0

My family can't tell the difference either! It's kinda fun to watch and see! 😂😂0 -
We do tacos or breakfast for dinner a lot, I love that everyone can build their own dinner according to their preferences.
We also do burgers a lot. I just throw a turkey burger on the grill for me with their beef burgers, and skip the bun and either do a cheeseburger salad or a lettuce wrap.
Mushroom porkchops and rice are another family favorite. I have mine with either a small amount of brown rice or over cauliflower rice.1 -

I put a bit of butter or olive oil in a pan and Sautee pork chops for about 3 minutes on each side. Then add a can of cream of mushroom soup and half a cup of water, cover and let simmer for another 5 minutes or until the pork chops are cooked through. The soup helps keep it nice and moist, and I like to use it as a gravy over the rice (or cauli-rice) too. You can also do it with chicken, or with different types of soup. Chicken with cheddar cheese soup and then some steamed broccoli tossed in at the end is also good!1
