Happy Wednesday!
Tonight, at our house for dinner,
we are eating salmon with Old Bay
along with a side of baked mixed vegetables
mixed with Montreal Steak seasoning and olive oil.
And a plain side salad.

LOL - I'll ask my husband - who does ALL the shopping and cooking. This is a tremendous blessing to me, but it can also be an issue as he thoroughly believes that fat = flavor, which is absolutely true. We're heading into a vacation so I think it's mostly leftovers so we can clear out the fridge and not come home to green slimy things growing!8

Usually the most variety in my meals are at lunchtime. Today I branched out and had Zatarain's red beans and rice with sausage. I have to laugh because I had 1/4 of the meal but the serving size listed is 1 per at 550 cals... yikes. I have found tho I can have almost anything if I work on the serving size. Tomorrow will be Chicken pot pie. Variety to me is KEY to logging because if there are errors you are not compounding them by always eating the same thing day in and day out.10 -

3km walk. Overslept today and missed my Epic workout. But I am so tired 😴 I spent all last weekend cleaning our new apartment. I drive there again on coming weekend to finish the cleaning 😊.9 -
A lot of times it's nothing too remarkable, but tonight just so happens to be steak at my wife's request (every few weeks she must have steak and I don't ask any questions, I just cook it). We're splitting a large 20 ounce grass fed strip steak, will be grilled over mesquite coals, topped with some maytag blue cheese butter. We do our own sides, only because I can't eat the ones she makes while I'm keto (usually either roasted garlic mashed potatoes or fettucine alfredo, she makes stellar versions of both). I'll be having asparagus and brussels sprouts (why did I wait so long in life to discover how much I enjoy brussels sprouts?).12

Tonight we had roasted chicken thighs and salad and a half cup of wholegrain rice. Usually I skip rice but with all the exercise I had today I need it to go get me to 100g of carbs for the day.9 -

Today was a betroot orzo for lunch and beans on toast for tea because my 4 year old has just started school so this week he gets to pick tea.
I discovered a great series of cookbooks "the roasting tin" series. You can Google and find recipes if you're interested in trying any. The premise is "put this in a roasting tin. Chuck in the oven" for every meal. I've got a 4 year old and a 3 month old so ease is key. They're generally pretty healthy and incredibly delicious. So 90% of cooking is food from in there.9 -

Tonight was my bi-weekly potluck Bible study group meeting at my house... I ate tomatoes, carrots, broccoli, and some shrimp. I did NOT eat the shredded chicken sandwiches or the cherry cheesecake!! 😐 (for dessert I had a banana and some grapes!)9 -

@LeeH31 I LOVE breakfast for dinner! We always had homemade sausage biscuits on Sunday nights after church when I was growing up!

I made pan sautéed tilapia ( old bay blackening seasoning mixed with a little flour and shake the fillets with the seasoning in a ziploc, pan on medium high with a tough of olive oil, 4 minutes on each side), baked sweet potato ( made in the air fryer because I love what it does to the skin, salad greens and tomato with Bolthouse cucumber ranch dressing( tastes like tziki sauce)

Dinner tonight was riced cauliflower and salmon. I was in a hurry, and it was quick. My calories are tight, so I keep things really plain. I just cooked them both in a frying pan with a light spray of Pam, topped with salt, pepper, and a little soy sauce.

Today's EPIC workout included push up variations as every third exercise. I managed them about 3/4 of the way in but then switched to some other exercises instead. I'm exhausted and am going to bed as soon as I'm done posting which is several hours earlier than normal. I know it's early days but I'm really liking the EPIC program. Lots of variety so no time to get bored.
Tonight I made a stir fry of beef and snow peas over basmati rice with sides of fresh cucumber and daikon kimchi. I had so many calories left after dinner that I had a small bowl of ice cream which isn't typical for me but we had dinner guests on Saturday so happened to have some in the freezer.7
