I thought I'd dedicate this month's thread to Dr. McDougall. I was sad to learn he passed away. He and his wife have been big influences on me, and I always appreciated how they share everything on their website without charge or making you join anything. I have purchased several of his books and cookbooks over the years.

Bisky, your last post for June... Charlie Bear looks so happy in that backpack! So cute. Brooks is quite the adventurous cook, that sounds great.

Got home late and not up for fussing with dinner. Maybe some steamed cauliflower and a rice cake or two. It wasn't a bad day but didn't get to a number of things I planned to work on and need to make sure they get done tomorrow.

    Mornin' all. I am working from home today. We were going to close early anyway and finally fully staffed again so I decided to work from home and will go in Friday because nobody else will be around and I can get things done in peace and quiet.

    Going to visit with family later today and going to try to get another appointment with my doc because the headaches have returned. :(

    Plan for today...
    B - yukon gold potatoes and steamed broccoli with balsamic and nooch
    L - big ol' salad (brought home from yesterday never had time to eat lunch)
    D - stir-fry with red rice

    Good morning!

    Mihani glad you are quitting early today. Have you checked your BP when you have the headaches?
    Love love veggie stir fry!

    Went to a Korean restaurant yesterday and had vegetarian Bibimbap with tofu. So good…but I forgot to skip soy sauce and it has gluten. Stomach was upset rest of afternoon.

    Yesterday was swim then yoga before lunch. Yoga was much tougher than Thursday yoga…a lot of getting up and down. Kicked in my Meiner’s dizziness and vertigo. So with upset stomach and dizziness I took Meclazine and melatonin and went to bed early. Slept 10 hours and feel like a new woman. Might swim again with Brooks later this afternoon as military pools will be closed all weekend for the fourth. Cooler this am dog walk.

    Sweet tooth reared up again but I found these black grapes that are extremely sweet….like eating grape jelly. 😂. Just a few are very satisfying. Have not found good peaches yet.

    Oh no Bisky... sorry about the upset stomach and the dizzy spell. Glad you got some rest. Have you tried freezing grapes? They make a really yummy treat. The big juicy ones are best... probably because more water content for freezing.

    Going to take it fairly easy today. Read, nap, laundry, and get some work done throughout the day.

    Plan for today...
    B - No-tuna salad on ezekiel toast
    L - big ol' salad
    D - stir-fry (didn't make it last night ended up ordering in asian fusion with the family)

    The miso soup last night was delicious! So flavorful and had spinach wilted in. Going to have to try to recreate it.

    Mihani - Yum! The miso soup sounds delicious. I hope you have a restful day. We are doing the same. Two miles walk before the heat hit.

    My friends did not go out of town…..they were to tired due to the heat to want to drive anywhere plus the hotels and airfare was all high for the holiday weekend. I didn’t plan a thing other than thinking we were going to have 5 dogs to contend with. Good for Brooks to rest up.

    We are bean making today. Made a bag of chickpeas in the instant pot and used 1/2 to make hummus. Now cooking a bagbof black beans for more soup tomorrow.

    Glad you had a relaxing day and feeling better, Bisky. How is Brooks doing?

    I am hitting up the grocery after I leave the office today. Not going to stay all day probably until around 3:00. I have done some reading up on miso and apparently you want to mix in the miso just before serving so as not to kill off all the good bacteria by boiling in the soup. I am also going to pick up some yogurt. Doc put me on a course of antibiotics because he suspects a sinus infection although I really don't have any symptoms of that other than the vise-like headaches. He asked if I had been congested and I said no more than I have been since I was born! LOL

    Just kind of bums me out as I've become more aware of microbiome health and have worked hard to build a healthy gut now the antibiotic will kill off a lot of the good bacteria.

    Read some recipes for miso soup and think I'm just going to wing it. Veggie broth, ginger and garlic, green onion, spinach, oyster or shiitake mushrooms, tofu, a splash of soy sauce and/or rice vinegar. Then add in the miso when serving. Thinking if it turns out well it would be great to make a big batch and freeze in serving sizes then just heat, add in miso, and enjoy.

    Plan for today...
    B - ezekiel toast with tahini
    L - big ol' salad
    D - stir-fry which I still didn't get made yesterday. Had a bad headache and just went to bed.

    @Mihani I love the tribute to Dr. McDougall this month. I was sad and shocked to hear of his passing too.
    Sorry I've been so MIA lately, we've had a lot going on and a lot of traveling back and forth to FL and other stuff. Sorry to hear about your headaches, I hope the antibiotics work. I think your microbiome will recover pretty quickly with how healthy your diet is. The miso soup sounds delicious, I never knew you were supposed to add the miso at the end; I'll have to try that next time I make it.
    @bisky I hope your upset stomach and dizziness have cleared up. I'm with Mihani - frozen grapes are really good.
    Hi to everyone else here also. I didn't get a chance to go back and read the last couple months, but I hope everyone is healthy and having a great summer so far. We're dealing with some pretty oppressive heat here is SC, it was a bit breezy the last couple of days which helped, but today the air is especially stifling. Indoor work for us today.

    Spring! We have missed you glad to see you back. Yeah, I had no idea about not getting miso too hot, although it makes sense. We finally got a couple good rains over a few days here which cooled it off tremendously. Is all the travel helping out with family? Your BIL if I recall correctly?

    The stir-fry is going to get put off yet another day. Going to meet up with some friends. I'll have a glass of wine and a salad. Forgot my lunch salad so I just ate some yogurt and an apple at the office. It was a fantastic day in there. Nobody else came in and the phones didn't ring. I got a lot done!

    Mihani - Hope you get caught up on work. Sinus infections are the worst. We just bought a small air purifier for our bedroom and a large one for the living room. There is some type of weird dust in the air and with 3 dogs they will track in a lot of dust.

    Sparks - San Antonio is very hot and humid here too. I am visiting my sister in Hilton Head next week. Sounds like I won’t get a break from the weather.

    Met friends 0730 for walk along the Riverwalk. 2.5 miles before heat set in.

    Brooks made vegetarian bibimbap last night except for adding an egg. So good. We both caught up on some rest. Going out to a Mediterranean restaurant tonight. Hopefully will find a vegetarian gluten free choice.

    Good afternoon, everyone. I like the tribute to John McDougall. I’ve seen him in videos and subscribe to his email thread. I believe his daughter is involved as well as his wife. I saw this photo in Substack. A vegan blogger and podcast host Chuck Underwood aka Brand New Vegan posted a photo with him.

    He credits McDougall for his own becoming vegan.

    Had small baked potato topped with refried beans and baby greens salad for lunch.

    Trying a burger recipe for dinner, Black beans, oats, walnuts.

    Bean cooking and miso soup sounds good, Mihani and bisky.

    Bisky, I totally forgot about the air purifier! DOH! I got one a while back and had it in the family room and had moved it to the living room to take upstairs and start using in my bedroom and there it sits still. Tells you how often I go in my living room. LOL

    I just now went and set it at the bottom of the steps so if I forget again I'll trip over it.

    Have fun out at dinner tonight.

    Stayed about 5 hours at the office today and got my desk pretty well cleared off, but of course I have a big stack of files here in my home office which helped clear off my desk there. I have 4 files with big due dates and will concentrate on those tomorrow, but will be working here at home and doing laundry all day.

    Had a hair appointment on the way home and it feels so good now. Since I let it go natural and gray it is so much easier, but I can't put off the haircuts because it turns to straw and the natural curl dies if I don't keep it trimmed up. It's only about shoulder length. I used to always have long hair. Also got my eyebrows waxed. I don't do that all the time, but they sure look better and I'm terrible about maintaining on my own.

    Day 3 of antibiotic and I am feeling SO much better. Maybe my doctor's suspicion of a sinus infection was correct. No headache at all today and much more energy. Fingers crossed it lasts. I'm also taking mucinex and sure hope that the doc was right and this will fix me all up.

    Going to put the stir-fry off one more day because I've had a long one and I'm not up for all the chopping. I will make it tomorrow because I'll be home all day and no excuse. Plus I decided I wanted bok choy and just stopped to pick up some after my hair appointment.

    Hey Sue, sorry missed your post since I was taking a while to complete mine while I putzed around with other things. I love that photo with Dr. McD. I have visited the brand new vegan website before and like it. Baked potato topped with refried beans sounds really good will have to try that.

    Hi friends, jumping on to say I’ll be out for a while. Have been seriously sick this week and went to ER today to make sure it wasn’t my heart. It wasn’t but I will have my gallbladder removed tomorrow. Also have a diverticulitis infection. I’m a mess right now. I was supposed to pick my niece up from the airport this evening. Uffda.

    Mihani, thanks for the warm welcome back! Yes, it's my BIL. We were able to clear out almost everything in his house except some basic furniture that the real estate agent wanted to leave in for when she shows the house. We brought all of the stuff he wants to keep here to our house (...yay....), sold a lot at a yard sale (..bigger yay..) and gave the rest to a non-profit (also a big yay). The plan for the conversion of our garage so he can move in with us is now in for permit review and we have our existing garage pretty much cleared out so construction can start as soon as we get the permit. And hey, if you can, send some of the rain you've gotten our way so we don't have to keep watering our grass to keep it alive that would be great LOL . Also, I'm very glad the antibiotic is working for you - I hope everything clears up and your microbiome gets back to normal ASAP.
    Bisky, sorry to hear about the heat/humidity - when we visited San Antonio the weather was great. We loved the riverwalk and fell in love with the city.
    We live in Conway, about half hour west from Myrtle Beach, but were in Hilton Head many years ago and really liked the area (we golf so of course we did). Hope the Mediterranean restaurant has some great options for you.
    @susmannie , nice to meet you. I haven't heard of Chuck Underwood/Brand New Vegan, thanks for introducing me to him - I'll have to check him out. BTW - black beans, oats, walnuts burger sounds delicious.

    Coffee, yikes! I am so sorry you've been so sick. I have had friends tell me gallbladder pain is excruciating. Sending good wishes for a speedy recovery.

    Spring, that is so nice of you and your husband to convert a space for your BIL to live. I'm sure it's all pretty stressful and going to be an adjustment too.

    I slept about 10 hours! Only got up once all night. I gathered up all the laundry and stripped the bed first thing. I am way behind on bedding and towels. I'll get a load of clothes out of the way first and do the rest while I work here at home. Will be lots of trips up and down two flights of stairs so I'll get in lots of steps.

    Thinking I'll get all my veggies chopped for stir-fry this morning so it won't seem like such a chore at dinner time.

    B - oats with yogurt and blueberries and banana
    L - ezekiel tortilla stuffed with lots of lettuce, arugula, cucumber, olives and banana peppers
    D - stir-fry veggies and edamame (finally!) with red rice

    I've been enjoying red and purple/black rice lately. It seems to taste better leftover than brown.

    Mihani, We'll definitely have some adjustments to make, but I think it will be worth it to keep him out of a care facility for as long as possible.
    I've never seen red rice! I'll have to look into that.

    Coffee&HP….will be thinking of you and I hope you have a good recovery. Plus diverticulitis on top of that! Big ouch. Seems like you are taking turns with health issues with you and your husband. I am sorry.

    Susmanie - let us know how the black bean burger recipe went. I have about 2-3 cups of black beans left over after making black bean soup. We cooked a one lb bag of black beans in instant pot. Have given away two 16 ounce containers of soup. Have 2 left.

    Spark - I think I missed the post about your BIL. Really wonderful and generous of you to do that.

    Magic - are you ok? Miss you! How is Lulu?

    Carla - how is the reboot going?

    Mihani - So good to hear you are feeling better and had a good nights sleep! I really don’t care to chop up veggies. I am getting spoiled that the commissary has cut up veggies. Yesterday I bought a container of sliced yellow squash. Was bummed there was no sliced celery yesterday and had to cut it up for hummus dip. I am so lazy. Will have to try the rice you are talking about.

    Getting ready to make some rice now to serve with black bean soup. I did make 2 more containers of hummus and then 2 cups of chickpeas for snacking. So easy in air fryer to make crunchy seasoned chickpeas and cheap compared to store bought snacks.

    Weird thing with a friend today. I ruined a pair of white jeans yesterday. My water bottle leaked and the purple water bottle holder bled onto my white jeans. Have tried oxyclean, bleach, etc and still a faint purple stain. Brooks had just bought me two new tops that look great with white jeans that I want to take to Hilton Head next weekend. So I mentioned to a friend and she wanted to go to military exchange as they have a big 4th weekend sale. I am looking for a new pair and she says…do you wear a size 16? I said no, about a size 12 ( after losing 76 lbs and 24 lbs from goal weight). So she actually followed me to dressing rooms and sat outside….wanted to see the jeans on me. They fit fine…actually a little big in waist but I was worried a size 10 might shrink too much. She then said, wow I didn’t realize you had lost so much weight. It left me feeling weird…like I must still look really heavy and why would I lie about clothing size? JUST WHEN I THOUGHT MY BODY IMAGE WAS HEALING AND DIDN'T NEED EATING DISORDER THERAPIST! 😳🙄😂😂😂😂😂😂😂😂😂😂 GOOD THING I HAVE AN APPOINTMENT TOMORROW!

    My husband Jeff and I went to Unitarian Fellowship services yesterday, where we are members. I joined the zoom service during the pandemic, working from home and looking for human connection, and we joined when on-site resumed. We’re both retired. Me only since March 1. We married later, at 40, first time for both, no kids. We do like our cats a lot!

    UU has a hiking club, a book club, and other activities, plus the humanist-oriented outlook aligns with ours.

    It was a first try on the black bean burgers. Very simple flavor, nice texture. Will probably tweak a bit. I made them because there was a shorter list of ingredients (than most), and not as much slicing and dicing. I’m a recipe user; I haven’t reached a point where I have the confidence to cook things and toss them together yet.

    Bisky, congratulations on your weight loss. Size 10 jeans big in the waist? WOW. And I love your dog photos. And Brooks, I see, is in there enjoying them.

    Mihani, red and black rice? Sounds like I should try.

    I will post the burger recipe. On to the rest of Monday.

    Hi all,, I was offline for a couple days but finally back up and running. Irritating because it meant even more time in the office since I couldn't work from home at all.

    So this is a quickie because I'm also battling a miserable cold, or maybe it is just my sinuses breaking loose, but feeling pretty yucky and want to go to bed. BUT, I just have to say, Bisky that friend of yours sounds very weird. I would really try to ignore that even though it is hard. Her comments and behavior say a LOT more about her than they do you, and none of the things it says about her are good.

    Oh no, Mihani! Did you test for Covid as it was going around your office a couple of weeks ago? Take care.

    Sus- I love short ingredient recipes.

    Sigh - my middle sister called today. She brought up her keto diet again despite me in the past asking her to not talk about diets. She talked about making gluten free, almond flour cookies sweetened with monk fruit. I didn’t say anything…any type of cookie is a slippery slope and my nutritionist does not want me to use any sugar replacements. Anyways she states her cholesterol is 250 😳 and her Dr. thinks that is great! 😱😱😱she is even on a cholesterol lowering drug! Then she states she was having constipation and without thinking I said you should have some beans. OMG, you would have thought I would have suggested poison. She informed me beans were high in carbs. So almond cookies are ok but not beans? So I said, because at this point I have lost patience, I think keto is a very unhealthy diet. Silence…then she says let’s not talk about diets….i state that is what I have said all along. 🤣🤣🤣

    I have been enjoying freezing grapes and having them as a snack. Obi had second shots today and his weight is up 2.5 lbs since we got him!

    Thanks for posting that burger recipe, Sue. I'll have to give that a try. I have a cookbook by Robin Robertson. I think it is Fire and Spice or something like that. I recall I liked the few recipes that I tried. I used to buy way too many cookbooks, even in my younger years before I was even vegetarian much less vegan. I weeded a bunch out some years ago and probably "only" have 50 or so now. Quite a few are non-vegan but were passed down through generations and have notes from my mom or grandmother on the recipes. One is so old it talks about adding wood to the oven and has no temperatures on any of the recipes.

    Bisky, maybe your sister will stop talking about it now that it is her idea to avoid diet talk. LOL

    And yeah, I tested for covid on Monday and did it again last night. I really didn't think it was covid or even the flu since it's almost entirely in my head not really much of a cough and no chest congestion, fever, etc.

    I'm going in a little late today. I have been getting up several times a night since I got this cold because I get so congested and I slept in this a.m. Feeling quite a bit better just worn out. I will take it fairly easy the next couple days and hopefully be back to normal by Saturday.

    Oh, and I was looking for home remedies for sore throat besides the tried and true salt water gargle, and several sites mentioned cayenne. I added cayenne to the salt water and wow, does that ever work!

    Hope you are feeling better soon, Mihani. I have quite a few vegan ecookbooks. Particularly fond of ones that are “One Pan, One Dish” or similar. Sometimes I find that there are a long list of spices/herbs listed. Always looking for quick and easy. Your mom and grandmother’s cookbooks with notes; wonderful to keep. I still have my Betty Crocker cookbook from early in my marriage.

    Bisky, that keto diet thing is dominating diet thinking now. Not for me. I sympathize with you on dealing with your sister. Beans=evil carbs, gluten free cookies=wonder food. I pretty much avoid cookies too, they have power over me I don’t like. Had blood tests recently, everything was very good. I think that says a lot about eating this way.

    I’ll have to try freezing grapes. I eat a lot of fruit to take the place of those cookies and desserts. Oh, and Obi is a beautiful dog.

    Ran out to finish shopping. Husband Jeff’s 70th birthday Saturday. Tomorrow we have plans for a walk with Unitarian Fellowship group at a Long Island park. Saturday birthday lunch out.

    Made Indian “risotto” last night. Was good. It has garbanzos, cauliflower, peas. It’s better when I don’t scorch the garlic/ginger. I guess you learn as you go, improve with practice, as with most things. And leftovers tonight. Yea, my favorite meal.

    Sue, I do love a good cookie now and then. I don't often crave sweets, but when I do it's usually a cookie. Sounds like you have a nice birthday weekend planned. I've done the scorched garlic thing quite a few times... it does not smell or taste pleasant!

    I am feeling substantially better today. Still worked a shorter than usual day and going to bed soon. I hope I can actually get a full night of sleep and that I wake up tomorrow feeling normal.

    I passed a peach truck today and stopped to get some. Can't wait for them to soften up in a couple days and eat 'em up.

    I've been a little off the rails eating-wise. With being sick I mostly wanted to eat miso tea, ezekiel toast, Dr. McDougall soups, and oats with yogurt and berries. Should be able to get back to a lot more veggies tomorrow. Will stop at the store tomorrow evening to restock. Not going out with friends since I am just recovering and don't want to overdo it.

    I like the tribute to McDougall this month.

    I am still struggling with food. If I could just eat the Plantage dinners and have a simple breakfast without any snacking or sweets I would be fine. I need to do a reset. We can pause our meal plan for a while, but if we cancel and then decide to come back later, we wouldn't be able to get the same pick up day of the week. And we need it to be that day because Joe goes in to the office one day a week and the place is very close to his work.

    I purchased a replacement hammock and a new patio tablecloth to perk up the patio. Joe and I keep talking about how nice a pool would be. If we could snap our fingers and have it done, it would be a no brainer, but there's a lot of mess and chaos between now and having a pool finished and ready to swim in. (but a great low impact way to exercise and in the privacy of our yard.)

    Not much going on here, just trying to get back into my posting habit. Nice to see all of the participation in the forum!

    Carla, happy to see you. :) I think a pool would be so awesome!

    I am feeling better today but still not even close to 100%. I am not going to the office tomorrow but will go in for a bit on Sunday. Will work from home and do laundry tomorrow. A client gave me some zucchini so I'm getting ready to make sauteed onion and zucchini, and I picked up some corn on the cob and watermelon. Talk about a perfect summer dinner!

    I didn't make the sauteed onion and zucchini last night but the client also brought eggplant and it just dawned on me that I have everything for ratatouille so I'm going to make that today.

    Internet is still wonky so they are sending a tech out today. Hopefully they can get it working properly. Also good motivation to straighten up my kitchen and put away all the stuff that I tend to let pile up on the counters. Can't have some stranger thinking I'm a slob!

    Feeling much better today. Just a little stuffy but nothing like the past week. Nice to have some energy again.

    Glad you're feeling better, Mihani! We had ratatouille a few weeks ago and I really enjoyed it. I ended up eating the leftovers cold because I enjoyed it that way too. We had roasted eggplant in our lettuce wraps last night.

    Been a busy day although it doesn't feel like I accomplished much. Got the house straightened up before the internet tech got here. He spent about an hour checking lines and testing, then hooked up yet another new router (I had just exchanged it earlier this week for a new one) but it's a different type of router and so far so good. Then I got to spend half an hour getting all the devices back on the network.

    Took a trip to the wholesale club so I have household goods for 6 months now I think. I haven't even got into the giant containers of laundry and dishwasher pods that I got last month. They have huge bags of frozen veggies and fruit very cheap so I keep well stocked on those. Although lately I've been staying stocked on fresh veggies and not using frozen so much. I do want to try the frozen veggies in the microwave steamer to see if they come out better. I just don't care for the texture of frozen veggies much but they are fine in the one pot bean and veggie stew concoctions that I like to throw together.

    I'm cooling on the idea of ratatouille and I'm going to make mexican lasagna. I am thinking layers of corn tortillas, refried beans, black beans, loads of peppers, onions, corn and zucchini sauteed with fajita seasoning, tomato sauce and top it with salsa and sliced olives. I can make a cashew queso for serving and grabbed some avocados while I was at the wholesale store. I made a mexican lasagna some time ago that was soooo good, but I winged it after reading several recipes and no idea how I made it. I hate when I do that! I should write things down when I cook like that.

    I also have fresh green beans and the eggplant that I need to do something with. Guess I can add the eggplant to the lasagna and will saute the green beans with onions and mushrooms to eat tomorrow.

    Carla, I eat almost all leftovers cold these days. Honestly because I enjoy them cold, not because I'm too dang lazy to pop them in the microwave. LOL

    I've got back on an ezekiel bread kick eating too much toast and english muffins with tahini. I need to nip that in the bud because I was steadily losing weight avoiding bread. Pasta and bread are very hard for me to portion control so I'm best off avoiding them.

    Okay, off to cook! Going to the office tomorrow but I don't think for a whole day. Maybe 5 or 6 hours.

    Well, hello. :) Gallbladder is gone and I'm healing up nicely. Diverticulitis flare up is in check. Liver is not in good shape - my blood tests in hospital were off the charts - better at discharge but still way too high. That will be addressed next week at follow-up appt. In the meantime, I stocked up on foods that help with keeping the liver healthy - grapes, dried cranberries (no sugar), garlic, leafy greens, cruciferous veggies, green tea, walnuts.

    When I came back to the group it was to get motivated to get back to WFPB. But this little hiccup put me on the fast track. I've got menu's planned and foods in the cupboard for the next several weeks. Husband is on-board to be my sous chef. Keeping it simple and actually excited to get back to it. I'm planning on 90-95% plant based.

    Sue - I'll check out the burger recipe. I've got a couple in line for the coming weeks, but you can never have too many burger recipes. I'm also trying a plant-based hotdog recipe. (Three camping trips coming up - thought it was a great time to try them).
