Looking for some fun type 2 friendly meals and ideas.

Hi! I'm Kim and I've had very well controlled type 2 diabetes for a few years, but now my A1C is too high so I'm starting a journey to lose weight and get healthy! I would love to swap some recipes and make some friends who get it!

    I am the most boring person with recipes. I eat roast meat and steamed veggies. I make a mean cole slaw and like to cook greens with a ham hock. I will cook a pot roast with mushrooms in the instant pot. I make a pork and gravy with leftovers and serve it over cauliflower rice.

    My wife's work schedule is more complicated than mine, and so I do suppers. We end up having lunch together maybe four times a week or so, but that is almost always leftovers. She makes bacon and eggs for breakfast.

    You are on meds? How many carbs a day in your diet?

    I don't get home from work until dinner time and my husband is caring for an ill family member, so my daughter (she's 19 and we pay her to do it) cooks our dinners. She's just learning how to adjust meals to meet my goals, but I'm currently at about 80-100 carbs a day. Goal is 60-80, but doing it slowly. The biggest challenge that I'm finding is making sure that I hit my 100+g of protein every day. I take metformin, which seemed to help a lot until recently.

    Chicken and pork tenderloin are great sources for protein, and you can manage calories pretty easily because fat content is not high.

    60 - 80 gives her some flex with things. She can make gravy with flour for example, and that makes things a little easier because it is just a standard recipe and not something special requiring xanthan gum or something.

    I say get her to roast a chicken or a pork tenderloin. Steam or sautee cabbage, cauliflower or broccoli. Carbs will be low, and it is a satisfying meal. You could have a salad with that maybe.

    For the sake of carbs, she probably want to avoid potatoes, corn and rice unless you plan the day to make sure you are staying within your limits. I do like cauliflower rice, and you can get it frozen at Walmart - just nuke it and you are ready to go.

    When I was first diagnosed, I was checking BG all the time and was on metformin. I did not really see it doing much until I got carbs down. The lower I got them, the better my glucose numbers.
