    Slept great...and enough, but up so early. So, going to the gym to sauna early and then home to shower and walk Lulu. Win Win! Hoping this routine will snap me out of my "depression"...not a horrible depression where I can't get out of bed type, but just a little I can't get myself to do sh&t around here type. House is a mess. Period! I am happy that I got Lulu into the vet and she is ok...that is a relief. So now, let's get this new routine going. See Ya!

    Green Juice (made 3 1/2 quarts this weekend. I have a vacuum sealer for mason jars...so it says pretty fresh for 6-7 days. And I have a slow juicer Nama J2, so that helps as well ...no so much oxidation)

    maybe a Dr. Mc soup cup for late in the day at work OR left over rice and stir fry veg

    Magic - I like Carla’s idea to keeping yourself open to something else that might bring you more pleasure. You were a teacher? How about librarian? Even if you could cut your hours and find something part time that is more enjoyable. My 75 y/o sister who works as a pastry chef in a Vegan restaurant just got a part time job at JJill. Lulu…such a cutie.

    Carla - how was the texture of the jack fruit?

    Mihani - how did the lentil soup turn out?

    Brooks was offered a job here in SA after we return from Alaska fall 2025. Former military CRNAs that he has worked with over the years are trying to recruit him. I am getting my head wrapped around Alaska….getting excited!

    Black bean sweet potatoe tacos tonight! I use the mini corn tortillas..aka street taco size. Mah Jong after dinner.

    The texture of the jackfruit was perfect for the stew after 45 minutes of simmering in the stew. It held together and was firm and beef stew-like. It would also be great as a pulled pork substitute. It really seems like a processed item rather than just fruit.

    Off to the dentist!

    Hi all, been super busy and trying to catch up. Glad to hear Lulu is okay.

    More this weekend. Going to still be extra busy next couple days. I am managing to eat right and treadmill despite the stress and long hours.
