This is delicious ! Recommend . Hubby and I made it last night. Yum π We literally had all the ingredients in our fridge and freezer and pantry (used canned diced tomatoes instead of sun-roasted tomatoes - cook 'em long enough, they taste the same ;-) ). I'm not sure why exactly I had Feta in the fridge, or Spinach in the freezer, but I did, so yay.

Iβm also including a recipe for on the go spinach/feta scrambled eggs in a cup. Cuts out the bread (gluten) I believe. I would leave out added salt for those of us with high blood pressure as feta is salty enough so you donβt need it and it makes it a less sodium recipe along with being lower cal and slightly lower cholesterol. If anyone is looking for that and you can probably sub the heavy cream with 2% milk or almond milk for lower fat or milk dairy free option.
