    Ohhh, how beautiful! What a lovely Christmas Eve check-in. Allie, that Kale salad sounds to die for. Feta, cranberries, pecans altogether - YUM ! Mary, which gorgeous island are you on this holiday season? πŸ– I love the meal in the half coconut!!! The other one, too. Except... you like your eggs the way my hubby likes them .πŸ˜¬πŸ˜†πŸ€£

    Wishing you both a beautiful Christmas. It snowed here in Maine! It was supposed to be 2-4", but we just got a coating (tho some towns inland got a foot! 😲)

    My daughter is traveling this holiday (she went to NY on 7a flight for cousins' Secret Santa gift exchange, she'll be having dinner with my two sisters and fams, & staying with my 2nd sister (the family with the cousin that came up to Maine to pet sit her animals when we were in Wisconsin last month)). My hubby went to her place to pet sit, and so I decided it was the perfect time to do a holiday fast. Hubby will be at Katie's for the first 3 days, so today is Day 1 Prolon FMD Fast! I've done four Rounds previously, 1 ea from May-Aug. Skipped Sep & Oct b/c I had labs scheduled. Skipped Nov b/c I was sick. And ... didn't do one yet in December for no good reason, really, so today's the day !

    Day 2 of my Holiday Fast, here:
    Less food today! Day 1 was "Transforming to a Fasting State"; Day 2 is "Fat Burning and Ketogenesis". Feeling good - Day 1 went great! Hibiscus Tea went in the Prolon Water Bottles (One of them will mix with the 'L-Drink' included in the Day 2-5 boxes). Spearmint Lemon Tea went in the teapot, along with a Yorkshire Gold Tea bag. (You can have up to 140 mg of caf per day, I skipped it the first 2 Rounds, not sure about the 3rd, but def used Green Tea bags on Round 4.)

    Merry Christmas, Everyone! December is a hard month for me when it comes to stress/stress eating. I’ve struggled the last few years over work deadlines/stress & Christmas holiday deadlines/commercialism stress. This year was a tipping point mentally/emotionally. Next year while I will try to enjoy Christmas music/lights/cards/tree(?) I am going to shift my focus to celebrating Winter Solstice, Boxing Day (as a healthy/clean out day), New Years & Epiphany. I have relatives who sort of celebrate Kwanzaa some & others who celebrate Hanukkah so I’ll focus some on that too. Trying to turn December from a negative to something more positive.

    I dig get in a nice lunch. Bibb lettuce, grape tomatoes, cucumber with shrimp and cocktail sauce as a sub for dressing. 869ahy6pysbd.jpeg

Day 3 of my Holiday Fast today, and it's about this day that I started to engage in massive food porning the last 2 Rounds! 🀣🀣🀣 Somehow, some reason, beautiful pictures of delicious foods that people have for their Transition Day (Day 6 and sometimes Day 7), that they share in the Facebook support group, are AMAZING !! And don't make me feel hungry or deprived, oddly. lol So, if you have some to share, pls do !

    Day 3 for me. Today is often the hardest day for many folks, going by posts in the Fastination Group. However, I love Day 3s usually. It's Day 4 that's hard for me. At least, that's how it's gone for me the previous four Rounds. Every Round is different, they say, so who knows how this one will turn out!

    Day 4, baby! Coming down the home stretch 🌼. So far, it's been pretty smooth sailing for me. D3 was fine. D4 has been my hardest in each of my previous 4 Rounds, we'll see how this one goes πŸ˜ƒ. I only slept for 4h 8m last night, so not off to the best start. 🀣 I'm planning a quiet day. Looking forward to D5 high tmw, tho! And who knows, maybe today will surprise me. Cheers!

    Our anniversary is on Jan 6 (Epiphany, @filmgal30 ! :) ). So, I spent last night surfing. I bought Renaissance Faire tix for this summer (all 3 weekends, 'season' pass, we've NEVER been to one, hope we like it!). It's just about an hour away, maybe a bit less. So I booked us super cute accommodations at 3 totally different properties for each of the weekends. So excited, hope it works out! Hubby usually works Saturdays, so I hope he can take those Saturdays off. We'll see.

    These are the three, in the order booked, for each of the Ren Faire weekends. They're all close to Acton, which is where the RenFaire is (it's about an hour from us):

    For the Shady Nook Lake House one, I was really torn. There was a super cute House in the Woods on Airbnb that I still kinda want to book instead, but I booked the one I thought might sell out before I give it to hubby, and I'll show him the other one then, let him choose. The bookings are all able to be cancelled or modified, so that's good. Although, Airbnb says the House in the Woods is usually sold out, too, so there is that. In the end, I went with the one that had the lake a short walk across the crowded/tiny lots street, instead of a pond that was a short drive away on the 15 acre property.

    I ended up with three other places, in addition to the ones I booked, (from all the surfing, lol) that I'd really love to book a getaway to, but none of them are good locations for getting to Acton.
    • One is in Kennebunk Beach, the oldest inn in Maine (Sea Side Inn - the same family has owned it since 1650!).
    • One is up the coast, in Camden, it has a Sail & Dine getaway with breakfasts and a schooner ride that we'd love (Inn At Ocean's Edge).
    • And one is in Cape Elizabeth (Inn By The Sea), with a variety of different packages that look fun, hard to choose!.

    Kale, boy choy , black currant juice.
    (Nature mades - pear and blackberries on side w ricotta -not sure ricotta counts for our purposes lol)

    Roasting some Brussels 🌱 sprouts and squash for later.

    Sure, ricotta counts. Sorta. Well, okay maybe not, but it's still healthy and yummy! lol ~ And, mmmmm roasted veggies. Roasted/grilled/broiled/charred/carmelized veggies are the best. Are you back home?

    Today's DAY FIVE ! My blood pressure has been in the orange and red since covid, it's been dropping this week. Hit the green today 🀍🀍 116/77. Nice! And tmw is Transition Day/Day 6! I can almost taste that avocado toast and salad already! 🀣

    So, the "Quaint Lake House" didn't work out. The host declined the booking. Weird, never had that happen before. Probably for the best, it seemed a bit odd-ish from the jump. Like, the listing didn't say it was across the street from the lake, found that out from a review. And, the host required either a $1500 damage deposit, or the purchase of a $59 damage insurance policy, which I'd never come across before. Anyway, c'est la vie! Maybe that means 'House in the Woods' after all? Not sure, I guess the idea of the lake was growing on me. Surfing around this morning ... we'll see. There's plenty of time.

    @SafariGalNYC ...... ahhhh that shake looks so good ! And the blueberries made me smile.

    We're still working our way through the 10-day Raw Gen Juice Cleanse, and the 7-Day Raw Fountain Juice Cleanse, that arrived a couple weeks ago. (I bought them on Black Friday Sales on a steep discount, and they arrived with our 3rd of the month Amazon Subscribe & Save. Going to re-order a new selection of Protein Nut Shakes from Raw Gen b/c they're so damn good, and a Protein Juice Cleanse selection from Raw Fountain, when we make it through these 102 bottles (lol) b/c they're so damn good.

    And I've been saving the bottles, b/c I'm going to remake them in batches, when we're through. I love having them ready to grab, instead of making a shake every day. And the ingredients are just what the juices/shakes/smoothies are, plus some filtered water. There's no strange ingredients, me and my Vitamix can make these way more economically than the price per bottle that they are.

    The Raw Fountain is $229.99 for 42 bottles, plus 7 ginger shots; ignoring the ginger shots, that's $5.47 ea; we got them on sale for $172.49, that's $4.10 ea.

    The Raw Generation is $369.99 for 60 bottles; that's $6.16 ea; we got them on sale for $265.43, that's $4.42 ea.

    Even the sale prices are high, IMO, so I'm definitely going to give a try at making them in batches, and freezing them, so they can be defrosted for grab and go, without the prep and cleaning every day.

    The Raw Fountain Protein Cleanse is already ordered and scheduled to arrive with our January Subscribe & Save. It has 3 repeat flavors that were in the Juice Cleanse (Rise N Shine, Water Vera, Citris Kick), and 3 new flavors that I'm excited to try (Glow Green, Nutty Cacao, Vanilla Delight).

    The Raw Generation is not ordered yet, I'll wait until we're out of the ones we already have.     Sunday Freg! ~

    Wooohooooo Transition Day! Day SIX! Felt great. Hubby slept in, so I continued my fast through lunchtime - had a Prolon Fast Bar, and the Spearmint Lemon Herbal Tea in my teapot, along with a PG Tips Black Tea bag (ran out of Yorkshire Gold!).

    We had avocado toast for brunch. This is where my avocado toast habit came from, btw. It's the recommended breakfast for your Day 6/Transition Day :). The greens, nuts, tomatoes, dates, and eggs got added on somewhere around R3, from suggestions/pix other Prolon Fasters posted in the support group on their D6s. ^-^. I can't believe how much I've grown to love it. In my Round 1, I purchased Prolon L-Protein Shake packets for my D6 Transition Day breakfast, b/c I just didn't think I was going to like the suggested avocado toast (ha!). I saved that suggestion for my lunch. Now I absolutely do NOT have the L-Protein shake to break my fast - I eagerly look forward to the avocado toast.

    I was going to (finally) make my Quiz soup tonight (White Bean Soup with Pasta), but the market we went to didn't have mire poix, so it'll have to wait (again) until next time I shop (at a different store lol). I mean, I guess I could just chop the carrots, celery, and onions up myself, but I didn't want to :p .

    Thx !! I started in May, did one a month from May to August, then my fall was kinda a *kitten* show, but I kept treading water :p. I feel really great that I got a round in before December ended. Round 6 in January!

    Monday Freg ~

    Avocado on toasted Dave's Killer Bread, w/ olive-oil fried diced tomatoes and an egg, with greens, diced dates, walnuts, and Coconut Vinegar:

    I'm about to braise some boneless chix breast and put in the crockpot. Then I'll use the pan to carmelize some sweet onions, and some red and yellow peppers, and add them to the crockpot, too. Then I'll use the pan with all the flavors to make the pasta for the White Bean Soup with Pasta, which I'll make later (still have to go to the store to pick up the mire poix). I'll def set aside/save the water from the pasta to make the soup with! It'll be packed with flavor ^-^.

    Hubby and I are supposed to make our 2nd Eating Well Healthy Kwanzaa Recipes mac & cheese, and cornbread, today. (He's off on Sun/Mons.) Monticello's Macaroni, and Real Cornbread are on the menu. I'll def have some of the cornbread when it's done, along with my soup. Not sure about the Chix & Veg, & the Mac & Cheese, tho. I know which one I should have on D7 of a Prolon Fast ;-). We'll see. Still have to make the Tostones, too, before the plantains aren't green anymore (bought them last weekend, but didn't get to making them). Tomorrow, I guess! Thinking of making another batch of Spinach & Feta English Muffin Breakfast Casserole tomorrow as well - I still have a bunch of English Muffins to use up. I love having lots of leftovers ready to grab (why I like those Raw Gen and Raw Ftn Smoothies and Juices so much!). It's still raining and chilly, as it was yesterday. Good day to have the kitchen humming.

I love having lots of leftovers ready to grab (why I like those Raw Gen and Raw Ftn Smoothies and Juices so much!). It's still raining and chilly, as it was yesterday. Good day to have the kitchen humming.

    I made 24 meal servings yesterday, plus 8 slices of cornbread! I made:
    • 16 servings of Braised Chicken & Caramelized Vegetables, with Butter Beans & Brazil Nuts,
    • 6 servings of White Bean Soup with Pasta, & added chicken
    • 2 servings of Avocado Toast & Greens
    • 8 servings of Real Cornbread

    Monticello Macaroni will wait for tomorrow, Tostones, and Spinach Feta Muffin Breakfast Casserole for today.

    I added some Roasted Chicken we had in the freezer to the White Bean with Pasta soup. I think the chicken pieces absorbed all the broth, heh. It ended up as a pasta dish, rather than a soup. But it was good! The 'Real Cornbread' was like a pancake! The batter looked different before it was cooked, I was skeptical it would turn out okay, lol. It has so few ingredients, no flour. It was like unleavened cornbread, I guess, tho there was buttermilk and baking powder in it, as leavening agents. Anyway, it was not 'bread'. I guess that's what they meant with the title 'Real Cornbread'. It was good, tho. We each had a slice along with our White Bean (not) Soup with Pasta, plus added Chicken. I used more spicing than the recipe called for, so it had a bit of a kick - the cornbread served nicely to cool that, as needed. I guess, of the two Kwanzaa Cornbread recipes I've tried now, I like the Creole Skillet one best :).

    Roast Chicken, Caramelized Vegetables, with Butter Beans and chopped Brazil Nuts:
    1. Braise the chicken, put in crockpot along with broth ~

    2. Cut, and caramelize, the onions (I peel & cut in half the onions on a cutting board, then cut the onions in the skillet - might as well get the cooking process started while I cut! :wink: ~

    3. Cut & caramelize the peppers, & add garlic, too :) ~

    4. Add Butter Beans, & Chopped Brazil Nuts, to the Crockpot (veggies & chicken already in there). Another 3 hrs to go! ~

    5. Crockpot's done! Meat & veggies separated, Dish out the veggies into containers, shred the chicken, add to containers, close up, label, & freeze! :) ~

    Nope!, on the Tostones. I forgot I had some other obligations to meet before we head out tonight for NYE. But I did get the 2nd batch of the Spinach & Feta English Muffin Breakfast Casserole done *-*. I just used the same skillet the veggies sauteed in, rather than a separate glass rectangle baking dish, as the recipe calls for, though. Easier ;-).
