Counting down until I can garden again. For now thankful for the aerogarden. Thai Basil, Dill, Mint and Genovese Basil growing and just started oregano and thyme.

We eat a lot of Rosemaryโฆ maybe because itโs the heartiest ๐ฟ and thrives ๐ Im going to try to be like my Rosemary plant โฆ

Youโve inspired me to try more potted herbs this year so I can bring them indoors. I havenโt had much luck with rosemary returning after winter which surprises me since itโs so hearty but oregano and mint are already starting to peep out๐ค yay hello almost spring๐ธ๐

Spring is a week away! Doing a health and spirit reboot. ๐3 -
ok itโs not all green- but I have been exploring veggie based flours to expand my nutrition.
So far these blends have come out the best:
Cauliflower flour/buckwheat rotini ๐ (w, EVOO, mixed herbs and nutritional yeast)ย
Zucchini flour/amaranth/buckwheat penne ๐ (w, EVOO, basil, oregano, nutritional yeast) (broke a part a littleโฆ)
cauliflower/cassava/almond flour, pizza topped with mozzarella, eggplant, bell peppers, arugula microgreens. ๐

I am currently olive-oil frying cauliflower, avocado, spices โฆ with diced tomatoes, then Good Culture Cottage cheese added. Then a couple eggs with shredded parm.
The cauliflower/avo/spices was an earlier-in-the week experiment that wasn't 100% successful lol. It was both too spicy, and I could still taste avocado, at the same time! (Turns out I still don't love avocado, unless it's buried in diced tomatoes, eggs, and smoked paprika :p.)

I grew up with no avocados in the house, my Mom didnโt like them! ! Went I went to my friendโs houses - I was like what is this wonderful delicacy? Haha1 -

I encountered guac in my 20s - didn't love it. It wasn't until my first round of Prolon FMD last May that I willingly bought an avocado. ROFL!
I looovveee them in my smoked paprika-diced tomatoes-egg version! I was surprised that I didn't like hubby's cauliflower avo version!
But. With the diced tomatoes, egg, and cottage cheese added, it absolutely hit the spot!
And yes, on the cauliflower rice! And pizza crust. And all the other novels uses of cauliflower. Love them all! Xx

Jumbo flame raisins, mini diced fruit snack mix, and apple juice today. A bit sketchy, as far as freggies go, but I got some in!
I was going to make avo toast and greens brunch, but hubby got a BK ad in his newsfeed and got a hankering for some, so I picked some up for lunch (Saturday is his Friday). I ordered a whopper jr, with no mayo and extra freg. They gave me a hamburger with no freg at all, not even pickles!, plus ketchup and mustard :/
I think I'm going to Brad Mondo my hair, and do the 2 ponytail DIY haircut tmo ๐ค. Shed some winter coat for spring! :)

I have a bag of cassava flour that Iโve been trying to find ways to use. Iโm thinking the cauliflower pizza crust would be perfect. Looks delicious ๐
Whatโs everyone making for St Patrickโs Day? Not a fan of corned beef and cabbage so Iโm leaning towards a pesto pasta. So much fresh basil to use and finally found a decent sized bag of pinenuts.
Doing a rainbow challenge for the next few weeks. Each week is a different color. Last week was red and had some beautiful red chard along with beets, radish, plums, tomatoes, apples, strawberries, dragon fruit, cherries and goji berries.
This week is orange. So far only had papaya and tangerines but have some carrots, turmeric, butternut squash, pumpkin and mangoes to work with.

i like experimenting with different flours, exploring different tastes and what would be better in different recipes.
I grew up on white flour and eating semolina pastasโฆ (funny enough I married someone from Italy who introduced me to other Italian pastas like spelt, etcโฆ )
I favor low gluten or gluten free flours and thatโs how I started blending different ones for my needs. I actually starting using yam flour or cassava in Africa! It imparts a crunch or crispiness thatโs wonderful.
You may like teff flour or quinoa flour as well for breads or pizza! (#though my current fav is a cauliflower,cassava, almond blend.)

hmm re Saint Patrickโs day menu. Been thinking about Irish stew or Shepardโs pieโฆ (I have lamb and veggies in fridge!)

Monday is our Sunday, I have a tentative matinee movie date scheduled with hubby. St Patty's Day - maybe some green, orange, and white! :)
I picked up some shaved Brussel Sprouts, Zig Zag Butternut Squash, and Uncured Bacon at Trader Joe's last week. The shaved Brussel Sprouts suggested roasting them with bacon, it sounded good, so I bought the things! And maybe some rotisserie chicken that is also in the fridge. That's green, orange, and white!๐๐ค๐งก
And some pomegranate blueberry juice, too, to throw in some Irish St. Patrick's Blue as well :)

Leftover St. Patty's Day from the fridge (so, brussel sprouts, butternut squash), plus a banana, pomegranate blueberry juice, mango kefir, and macademia nuts (trying to add fermented foods to my habits, too :) ).

~ avocado, diced tomatoes, spinach/spring mix blend, chopped dates, grape tomatoes, banana, plus walnuts. No fermented foods today.
Might have some more of that pomegranate blueberry juice later, too, we'll see (that would make 7!). I made avo toast w/ side greens, etc today. First time in a long time. I didn't remember to take a pic until after I cut up the toast w/ avo, diced tomatoes, and egg tho :p

It's raining here, and shockingly almost all the snow cover is gone! Usually that makes it until April here! I had my 1st Functional Fitness Thursdays - Stability Ball class today. The instructor bummed me out a couple weeks ago (she also teaches Functional Fitness Tuesdays - Resistance Bands), she kind of 'pre-kicked me out' of the class - said it might not be the class for me, b/c my torn meniscus makes getting down to, and up from, the floor painful, so I avoid it whenever possible (do standing modifications for exercises, that sort of thing). She told me to go to her website and watch a couple of the ball classes, and see for myself. There are a lot of floor exercises, so yea, good job on the heads up, Teach! But the exercises - core strengthening and leg strengthening, just what I need to do.
So I talked to her again on Tue, suggested bringing an assist to help me up and down to/fro the floor. She said sure. I brought a shower chair, heh. I felt like a bit of an idiot, but whatever. It worked! A few of the exercises were a problem, but most of them were good. Mini non scale victory!

Made a โhashโ of broccoli stems and carrots, stir fried in wok with nutritional yeast and herbs I brought back from Greek islands.
Topped with duck egg.๐ณGreen shake on sideโฆ ๐ฅฌ - Spinach, Kale, bok choy, Pineapple ๐ w collagen.
