March Week 4 Group Challenge - Pick a Color Nutrition Challenge

This week we're having a Nutrition Challenge. Each day this week, I'll name a primary and secondary color. Try to build a menu for that day using those colors. Now of course, you likely won't eat JUST those colors, but try to build them in as you can. Have fun and get creative. Report in daily and advise how your built your menu and if it was a challenge that day or easy peasy.

    The eyes on the cucumber kittens are kinda freaking me out! 😮 Too real looking, I wonder what they used for the ones in the bottom right corner? 🤔

    This should be fun and an easy one for me, I eat lots of colorful fruits and veggies.

    Sunday, Mar 23rd - Primary Green, Secondary Red : Spring baby greens salad with Red (really purple) onion for dinner. I also just had some delicious watermelon.

    Sun:

    I've been on a crazy salad kick lately, so I had a big romaine mix salad (with radishes, carrots) in it, cheese, a few croutons, bacon bits and light ranch dressing…nothing red though…I don't eat tomatoes…

    Also had a honey hot chicken sandwich and whatever is in the lunch meat is red, so I guess that counts…probably some sort of hot pepper.

    For my 2nd meal, I had one piece of chicken, a handful of lightly salted chips and a half sandwich of chicken salad.

    Yellow is tough, but I had a Yellow mini bell pepper! Celery for the green.

    Does anyone know how to attach photos on this?

    Tuesday, Mar 25th - Primary Yellow, Secondary Green

    Tue:

    Had a large salad for lunch with romaine lettuce, radishes, corn, carrots, croutons, a few pieces of chopped ham, cheese and bacon bits, with some light ranch dressing. I also had a tuna salad sandwich and some cheese crackers…two large iced teas. Awesome meal…my salad craving continues. I used to use way too much dressing on my salads, but they taste better with minimal dressing…I want to taste the lettuce, corn and carrots, not just dressing…also saves those calories for sure.

    For dinner, I'm planning a chicken sandwich and fries in my air fryer…

    Whew the week got away from me. Here are mine so far:

    Sunday, Mar 23rd - Green/Red - Caesar salad with romaine lettuce and bacon bits.

    Monday, Mar 24th - White/Blue - Greek yogurt with triple berry frozen blend (including blueberries) and honey.

    Tuesday, Mar 25th - Yellow/Green - Lunch was leftover tricolor tortellini (yellow, green and red) with ground pork, marinara and a side salad (more green)

    Wednesday, Mar 26th - Red/Brown - My breakfast this morning was a breakfast sandwich with egg, sausage, cheese, and a bunch of grape tomatoes.

    Wed: Red/Brown

    For my first of two meals today, I had a half of a tuna salad sandwich (finishing it up), a turkey/cheese sandwich, handful of low salt chips, two large glasses of iced tea with splenda and two small leftover chicken legs. Trying to clear our leftovers today.

    Tonight's meal will be baked chicken and peas. Brown was my bread, chicken and tea…no way to get anything red…just don't have anything. oh well…
