Enjoyed all the pics - color had me drooling!
Intended to make a pumpkin banana bread last week and forgot the pumpkin, so the banana bread turned out quite dark from the spices and molasses, lol
One pan, frozen green beans, peas, diced potatoes roasted with chicken.

@SafariGalNYC Sunburn, yikes! Maybe get some aloe? I awakened to snow and ice tingling the windows here in MA. 🌨️ it’s mid April but now I’m kinda glad I didn’t plant in the garden yet. I’m originally from NY and lived in the city for about 10 years. Is that where you’re from? I’d love to visit Cali, one of these days.

ooooo, that looks good! Broc salad! Ya, woke up to actual snow this morning, just before 6a, up here in Maine, eyes popped, and I went back to sleep. Woke up for good just before 8a, and yup, still snowing. And it's still going on now. Roofs and lawns are covered, trees draped in white. Just a slushy mess on the roads, tho. Bleh, April snow!

I go back and forth between LA and NYC for work.. (I’m usually in downtown NYC Rainbow!)I half ate my greens and veggie quiche before taking a photo.. haha

For me, in the past - veggies at breakfast was in a rare (denver type) omelet, but love it now. Often do a cauli rice stirfry for breakfast.
Lunch today tuna & salmon burger chopped salad with tomato & asparagus.
Asparagus is in season a couple months, love it.

We have been exploring egg alternative meals for the near 'too high priced' future.
Hubby suggested pizza of course :D - Experimented with mini naan rounds and corn tortilla wraps to make with grilled meats, cheese and veggie loaded. He seems to like them.
Tofu likely to be a me thing though. It looks so colorful and flavorful Rainbow!

Last night was taco tuesday with leftover meats & veggies
Today, Lunch was another chopped salad with tuna and some of the leftover meats & veggies.
Home late so did a quick stir together Greek Yogurt, blueberries, chocolate protein powder, pb2 powder, splash juice and a piece of the pumpkin banana bread (I remembered to include pumpkin this time, lol)

Costco sells a box of individual servings with 3 flavors; mixed berry, strawberry and french vanilla. This label is from a 4 pack for a single 1-cup 90cal container.
The french vanilla is working well as a substitute in baking or for added protein. I used it in both of the banana/pumpkin breads and was thinking even the berry flavors ought substitute well without skewing the flavors much.
For the pumpkin banana bread, a 1/8th serving out of a 8x8 pan came out 335 cals. Split and shared at breakfast with coffee that had chocolate protein powder for the protein macro balance.
I pulled ideas from multiple recipes and tried the typical 3 bananas with 2c flour, a cup pumpkin pak, 1 french vanilla greek non-fat yogurt 90 cal sized container.
Substituted and cut fat to a tbsp butter and substituted and cut sugar to a tbsp molasses. Also added ginger and cardamon to the spiced, so it had a gingerbread note.
The 2nd attempt with 3 bananas (increased from 2) & the added pumpkin was a lot denser and wet, so next time back to 2 bananas, and think I'll try adding baking soda in addition to the baking powder. It's a rather forgiving thing to experiment with.

Yep, used the regular Libby canned pumpkin, (not pre-spiced for pie)
Added own spices - i like a strong spice, and browsed recipes for ideas
Pre-heat 350, prep 8x8 pan with spray or oil.
Combine Dry ingredients stir into the 2c flour -
Tbsp each of baking powder and cinnamon,
2 tsp each of: nutmeg, ginger, cream of tartar, (figure next time i'll add 2 tsp baking soda too.)
1 tsp each allspice, mace and cardamon.
1/2 tsp preferred salt
Then, combine Liquid ingredients separately (not with flour):
First, combine the 1 1/2 tbsp melted butter and Tbsp molasses.
Then pour this into rest of wet ingredients & stir together:
Cup plain non-fat greek yogurt
2 Tbsp imitation vanilla (or Tbsp real vanilla extract.)
1 cup canned pumpkin
2 (or 3) small to medium sized smashed bananas
1c chopped walnuts,
1/4 cup chopped raisins (or craisins or tart cherries.)
3rd gently combine dry and wet ingredients until just combined (don't overwork), pour into the 8x8 pan, bake at 350. Check at 45 min to 1 hour - do the knife, fork or toothpick test for doneness. My last one took 1hr 40m because of that extra banana and pumpkin i forgot 1st time, I think.

I love the fresh greens in the falafel! I used a generous helping of cilantro and parsley with the garbanzo beans. I think the recipe is a keeper.I based it on these ingredients:

Picked up cilantro today, and pinto and black beans to try making the refried beans recipe shared in that crockpot discussion thread in the forums.
Leftovers today - shared open face italian meatballs type sandwiches on sourdough with picked chicken and last of the green beans.
Not sure what's up tomorrow other than prep for the family feast on Sunday. Picked up some bones to use with the hambone for soup later this week, and more asparagus, baby red potatoes.
